I still remember the Tuesday evening I stood over my kitchen sink, aggressively scraping charred, rubbery chicken nuggets off a cheap baking sheet with a metal spatula. Directions

  2. In a large bowl, toss the chicken cubes with olive oil until evenly coated.
  3. In a small bowl, whisk together the cornstarch, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
  4. Sprinkle the seasoning mixture over the chicken and toss vigorously until every piece is evenly coated.
  5. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  6. Arrange the chicken bites in a single layer in the air fryer basket, ensuring they do not touch. Cook in batches if necessary.
  7. Air fry at 400°F (200°C) for 8 to 10 minutes, shaking the basket halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have standard table salt, cut the measurement in half (use 3/4 tsp instead of 1.5 tsp) to avoid an over-salted disaster.
  • The cornstarch is non-negotiable because it binds with the surface moisture of the chicken, creating a starch gelatinization layer that crisps up beautifully under high heat.
  • Do not overcrowd the basket; if the chicken pieces touch, they will steam instead of fry, leaving you with soggy, pale bites instead of crispy ones.

Microwave reheating is a trap.

Instead, pop them back into the air fryer at 350°F (175°C) for about 3 to 4 minutes. This gently warms them through while crisping the exterior back up to its original glory. It is almost as good as the day you made them.

Ingredient Substitutes
