This burger bowl with roasted sweet potatoes and beef combines caramelized, crispy sweet potatoes with perfectly seasoned ground beef and a tangy special sauce.

Burger Bowl with Roasted Sweet Potatoes and Beef
Why This Recipe Works:
  • High-heat roasting caramelizes the sweet potatoes perfectly without turning them soggy.
  • Searing the beef in a cast-iron skillet creates a deeply savory crust via the Maillard reaction.
  • The tangy, creamy special sauce ties the warm beef and sweet potatoes together beautifully.

Three years ago, I sat in a humid Target parking lot, trying to eat a dripping, soggy cheeseburger while balancing a diaper bag on my knee.

The bun disintegrated instantly.

It was a sad, mushy mess, and as I scraped special sauce off my jeans, I realized I loved the beef but hated the structural failure of the bread.

My early attempts at home were disastrous. Cheap, thin baking sheets warped in the oven, leaving me with a pile of limp, steaming sweet potatoes.

Bear with me here, because the science of this is simple. Crowding your sheet pan traps moisture, which steam-cooks the potatoes instead of letting them caramelize through the Maillard reaction.

It got annoying fast.

To fix this, we roast the sweet potatoes at a high heat of 425°F on a bare metal sheet pan, giving them enough breathing room to develop a crispy exterior. Meanwhile, we sear the ground beef in a hot cast-iron skillet—the kind that has developed a slick, jet-black patina after years of washing—to lock in the juices, using a pinch of baking soda to keep the meat tender.

There is something deeply satisfying about scraping those caramelized sweet potato bits off the sheet pan with a metal spatula.

If you love customizable meals, this bowl is just as satisfying as our Smash Burger Tacos, allowing you to throw in whatever fresh greens you have in the fridge and call it a day.

Ingredients

  • 2 large sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 tbsp olive oil, divided
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp black pepper
  • 1 lb lean ground beef (85/15 or 90/10)
  • 1 tbsp Better Than Store-Bought Taco Seasoning
  • 1/4 tsp baking soda dissolved in 1 tbsp water
  • 1/3 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp finely minced dill pickles
  • 1/2 tsp pickle juice
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 avocado, sliced

Directions

  1. Preheat your oven to 425°F (218°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, Diamond Crystal kosher salt, and black pepper on a large, bare metal sheet pan.
  2. Spread the sweet potatoes in a single layer, ensuring they do not touch. Roast for 20-25 minutes, flipping halfway through, until they are caramelized and crispy on the edges.
  3. While the potatoes roast, whisk the mayonnaise, ketchup, mustard, minced pickles, and pickle juice in a small bowl to make the special sauce. Set aside in the fridge.
  4. In a medium bowl, toss the ground beef with the dissolved baking soda mixture and let it sit for 15 minutes. Season with the taco seasoning.
  5. Heat a large cast-iron skillet over medium-high heat. Add the remaining tablespoon of olive oil, then press the seasoned ground beef into the pan in a flat layer, letting it sear undisturbed for 3 minutes to develop a deep brown crust.
  6. Break up the beef with a wooden spoon and cook for another 3-4 minutes until fully browned, then remove from heat.
  7. Assemble the bowls by laying down a bed of romaine lettuce, then topping with equal portions of roasted sweet potatoes, seared beef, cherry tomatoes, red onion, and avocado slices. Drizzle generously with the special sauce.

Notes

  • Salt Conversion: We use Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/4 tsp instead of 1/2 tsp) to avoid over-salting.
  • The Baking Soda Trick: The addition of a tiny amount of baking soda to the raw ground beef raises its pH. This prevents the muscle proteins from contracting too tightly when heated, keeping the beef incredibly juicy and tender even after reheating.
  • Avoid the Steam Trap: Do not crowd the sweet potatoes on the sheet pan. If they are piled on top of each other, they will steam instead of roast, resulting in a mushy texture rather than crispy, caramelized edges.
  • Storage Behavior: Store the roasted sweet potatoes, cooked beef, and fresh vegetables in separate airtight containers. If stored together, the moisture from the vegetables will make the sweet potatoes soggy and ruin the texture of the beef.

Serving Suggestions

Complete this vibrant bowl by pairing it with fresh, crunchy elements or a refreshing beverage to balance the rich, savory beef.

  • Drizzle with a spoonful of The Best Simple Basil Pesto for an unexpected herbaceous twist.
  • Serve alongside a crisp, cold glass of unsweetened iced tea or sparkling lime water.
  • Top with pickled jalapeños or a spoonful of Homemade Salsa for an extra kick of heat.
  • Pair with a side of crunchy tortilla chips to scoop up the beef and sweet potatoes.
  • Add a dollop of sour cream or Greek yogurt to cool down the spices.

Storage and Reheating

If you are meal prepping these bowls for the week, keep the warm and cold components strictly separated. Pack the cooked beef and roasted sweet potatoes together in one container, and the lettuce, tomatoes, and sauce in another.

Nobody wants warm lettuce.

The beef and sweet potatoes will keep beautifully in the fridge for up to four days. When you are ready to eat, simply microwave the meat and potato portion for about 60 to 90 seconds until steaming.

For the absolute best texture, reheat the sweet potatoes in an air fryer at 350°F for 4 minutes to restore their crispy edges. Once warmed, assemble your bowl with the cold ingredients and drizzle the sauce right on top.

Ingredient Substitutes

If you need to swap ingredients based on what is in your pantry, here are the easiest, tested substitutions.

  1. Sweet Potatoes: Swap for diced butternut squash or try our Crispy Air Fryer Fingerling Potatoes with Parmesan for a classic potato option.
  2. Ground Beef: You can easily substitute ground turkey or chicken. If using turkey, check out our tips for keeping poultry juicy in our Gluten Free Ground Turkey Meatballs recipe.
  3. Special Sauce: If you want a lighter option, blend Greek yogurt with a splash of pickle juice and a pinch of garlic powder, or use one of our Easy Homemade Healthy Salad Dressings.
  4. Romaine Lettuce: Use shredded iceberg lettuce for maximum crunch, or baby spinach for a nutrient-dense alternative.

I hope this bowl brings a little bit of ease and a lot of joy to your busy weeknights. It has saved my sanity more times than I can count, and I think it might just do the same for you.

I've been developing recipes for about 12 years, and this one went through the same routine as everything else here: I made it, changed something, made it again, then had someone else cook it from just the written steps to see where it tripped them up. That's the part I care about most – not just that a recipe works for me, but that it works on a Tuesday night in your kitchen too.
