Ingredients

  • 1/2 cup Kewpie mayonnaise
  • 1/3 cup sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tsp rice vinegar
  • 3 cups cooked jasmine rice, for serving
  • Sliced green onions and sesame seeds, for garnish

Directions

  1. Pat the salmon cubes completely dry with paper towels to ensure a crispy crust.
  2. In a medium bowl, toss the salmon cubes with olive oil, garlic powder, onion powder, Diamond Crystal kosher salt, black pepper, and cornstarch until evenly coated.
  3. Preheat your air fryer to 400°F (200°C). Arrange the salmon bites in a single layer in the air fryer basket, ensuring they do not touch.
  4. Air fry for 7 to 9 minutes, shaking the basket gently halfway through, until the salmon is golden brown and crispy on the edges.
  5. While the salmon cooks, whisk together the Kewpie mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a large bowl until smooth.
  6. Transfer the hot, air-fried salmon bites directly into the bowl with the sauce and toss gently to coat.
  7. Assemble the bowls by dividing the cooked jasmine rice among serving dishes, topping with the bang bang salmon bites, and garnishing with green onions and sesame seeds.

Notes

  • We highly recommend using Diamond Crystal Kosher Salt. If you are using Morton's kosher salt or standard table salt, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
  • Cornstarch is the secret to the crispy exterior. It absorbs surface moisture and undergoes starch gelatinization under high heat, creating a micro-thin, crunchy shell that locks in the salmon's natural juices.
  • Do not toss the salmon in the bang bang sauce before air frying. The sugars in the sweet chili sauce will caramelize and burn rapidly at 400°F, ruining both the texture and flavor of the fish.
  • While the salmon is best served fresh, leftovers can be stored in an airtight container in the fridge for up to 2 days. Note that the crispy coating will soften in the fridge as it absorbs moisture from the sauce, but you can partially revive it in a dry skillet over medium heat.
  • Use Japanese Kewpie mayonnaise if possible. It is made with egg yolks instead of whole eggs, yielding a richer, more velvety emulsion that clings beautifully to the hot fish.

Leftovers will lose that crunch.

Store leftovers in an airtight glass container in the fridge for up to two days. The sauce will soak in, making the fish tender but soft.

To reheat, avoid the microwave at all costs unless you want rubbery fish and a kitchen that smells like a bait shop. Instead, gently warm the bites in a dry, non-stick skillet over medium-low heat for about three to five minutes, tossing frequently until heated through.
