  4. Arrange the marshmallow halves, cut-side down, over the chocolate layer in tight, concentric circles until the surface is completely covered.

  • I highly recommend using Ghirardelli milk chocolate baking bars instead of standard chocolate chips. If you prefer a touch of saltiness to balance the sugar, stir in 1/4 teaspoon of Diamond Crystal kosher salt (or 1/8 teaspoon of fine table salt) with the heavy cream.
  • The addition of heavy cream is crucial because it creates a ganache-like emulsion. This prevents the chocolate's fat and cocoa solids from separating and seizing under high heat.
  • Do not walk away from the oven during the last 2 minutes of baking. Marshmallows transition from perfectly golden to a charred, bitter mess in a matter of seconds.
