These chewy, buttery Springtime Funfetti Blondies are packed with pastel sprinkles and white chocolate chips, baked to absolute gooey perfection.

Springtime Funfetti Blondies
Why This Recipe Works:
  • Melted Butter: Bypassing the creaming stage prevents air incorporation, ensuring a dense, fudgy, and chewy texture.
  • High Brown Sugar Ratio: The molasses in light brown sugar adds essential moisture and creates that coveted shiny, crinkly top.
  • No-Spread Sprinkles: Using high-quality jimmies ensures the pastel colors don't bleed into the batter during mixing.

Three years ago, I spent an entire rainy Tuesday afternoon scraping a stubborn, carbonized layer of over-baked sugar off my favorite Nordic Ware aluminum pan because I thought I could eyeball the bake time on a batch of blondies.

I failed.

Most blondie recipes suffer from a structural identity crisis, masquerading as dry, cakey squares because bakers over-incorporate air during the creaming step or use cheap, moisture-heavy butter that throws off the fat-to-flour ratio. When you beat butter and sugar like you are making a fluffy Lemon Raspberry Cake, you trap micro-pockets of gas that expand in the oven, leaving you with a dome-shaped cake rather than a dense, fudgy bar.

The fix is beautifully simple: melt the butter completely to eliminate the emulsion.

Stir it by hand with brown sugar to encourage a glossy, paper-thin crinkle crust through rapid sugar dissolution, which works much like the base of my favorite Chocolate Chip Cookie Bars.

Let's bake.

Ingredients

  • 1 cup (226g) unsalted butter, melted and cooled slightly
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1/2 tsp almond extract
  • 2 1/4 cups (270g) all-purpose flour
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/2 cup pastel jimmies (springtime sprinkles)
  • 1/2 cup white chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch metal baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk together the melted unsalted butter, light brown sugar, and granulated sugar until completely smooth and no lumps of brown sugar remain.
  3. Add the room-temperature eggs one at a time, whisking vigorously after each addition until the mixture becomes slightly pale and thickened.
  4. Stir in the pure vanilla extract and almond extract until fully incorporated.
  5. Fold in the all-purpose flour and Diamond Crystal kosher salt using a rubber spatula, mixing just until the flour pockets disappear. Do not overmix!
  6. Gently fold in the pastel jimmies and white chocolate chips until evenly distributed throughout the thick batter.
  7. Spread the batter evenly into the prepared baking pan, pressing the spatula into the thick batter until your wrist clicks to ensure there are no trapped air pockets.
  8. Bake for 22 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the blondies to cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang and slicing into squares.

Notes

  • Salt Conversion: For salt, I exclusively use Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the volume in half (use 1/4 tsp instead of 1/2 tsp) to avoid an aggressively salty bite.
  • Science of Flavor: Almond extract mimics the benzaldehyde compounds found in stone fruits, which chemically tricks our brains into perceiving a rich, nostalgic "cake batter" flavor profile.
  • Workflow Warning: Keep a close eye on your oven during the final five minutes of baking; blondies transition from perfectly fudgy to dry and cakey in a matter of sixty seconds, so pull them out when the center still has a slight, barely-there wobble.
  • Storage Behavior: After a day in the fridge, the butter and sugars solidify further, transforming these blondies into an incredibly dense, almost fudge-like texture that is hands down better than when they are fresh.
  • Sprinkle Selection: Cheap off-brand sprinkles failed every single test because their cheap dyes bled instantly into the batter, turning a cheerful spring treat into a muddy gray mess. Always use high-quality jimmies.

Serving Suggestions

These blondies are spectacular on their own, but you can easily turn them into a show-stopping dessert centerpiece with a few simple additions.

  • Serve warm with a generous scoop of vanilla bean ice cream.
  • Drizzle with a homemade white chocolate ganache or warm caramel sauce.
  • Pair them alongside a fresh fruit platter featuring strawberries and raspberries to cut through the rich sweetness.
  • Serve them with a glass of cold milk or a hot cup of espresso to balance the buttery crumb.

Storage and Reheating

Store any leftover blondies in an airtight container at room temperature for up to four days.

If you want to extend their shelf life, wrap individual squares tightly in plastic wrap and pop them into the freezer for up to three months. They thaw beautifully on the counter in about thirty minutes.

Never microwave them for too long.

A quick five-second blast in the microwave is all it takes to restore that fresh-out-of-the-oven, gooey texture. Any longer, and you will melt the white chocolate chips into oily puddles, ruining the structural integrity of the bar.

If you love easy bar desserts but want to avoid the oven entirely next time, try these No Bake Peanut Butter Bars.

Ingredient Substitutes

If you need to adapt this recipe based on what is currently in your pantry, here are the most effective swaps:

  1. Light Brown Sugar: You can substitute dark brown sugar for an even deeper, caramel-like flavor, though it will darken the pastel aesthetic of the blondies.
  2. White Chocolate Chips: Swap them out for milk chocolate chips, or omit them entirely if you prefer a less sweet bar.
  3. Pastel Jimmies: If you don't have spring colors, standard rainbow jimmies work perfectly year-round, much like the festive look of Strawberry Sugar Cookie Bars That Will Blow Your Mind.
  4. Almond Extract: If you have a nut allergy, simply omit the almond extract and increase the vanilla extract to 1 tablespoon.

There is something incredibly comforting about a dessert that doesn't demand perfection or fancy decorating skills. Just mix, bake, slice, and watch them disappear from the counter before they even have a chance to fully cool.

Recipe Developer & Tester

I've been developing recipes for about 12 years, and this one went through the same routine as everything else here: I made it, changed something, made it again, then had someone else cook it from just the written steps to see where it tripped them up. That's the part I care about most – not just that a recipe works for me, but that it works on a Tuesday night in your kitchen too.
