Brie Lasagna Pasta Chips
A crispy, cheesy snack that combines the crunch of air-fried lasagna noodles with the gooey richness of melted brie.
- Starch Gelatinization: Boiling the pasta past al dente ensures the starches expand, creating a light, airy crunch instead of a rock-hard bite.
- Rapid Convection: The air fryer circulates dry heat rapidly, mimicking deep-frying by quickly evaporating surface moisture for maximum crispiness.
- Rich Contrast: The buttery, molten brie perfectly complements the salty, seasoned crunch of the pasta chips.
Last winter, I tried hosting a fancy cheese night and ended up crying over a pot of boiling oil because my homemade crackers turned into literal stones. My guests arrived to find me frantically waving a dish towel at the smoke detector while my cat hid under the couch.
It was a total disaster.
But then I discovered the magic of using leftover lasagna sheets in the air fryer. They puff up beautifully, mimicking the flaky layers of a gourmet pastry without any of the rolling pin drama. They are also the perfect crunchy addition to a Tinned Fish Board alongside creamy cheeses.
Most internet recipes tell you to just toss boiled pasta with oil and blast it, which is a one-way ticket to dental work. On a molecular level, pasta is packed with dense wheat starches that, when dried out too quickly without proper gelatinization, turn into literal concrete. I tested this with three different brands of pasta, and they all shattered like glass instead of offering a satisfying, airy crunch.
The simple fix is boiling the lasagna sheets slightly past al dente to fully hydrate the protein matrix. This allows the water trapped inside to turn to steam in the air fryer, puffing the dough from the inside out. Toss them with a splash of olive oil and a pinch of Diamond Crystal kosher salt before they hit the basket.
Trust me on this one.
Pairing these ultra-crispy chips with a warm, gooey wheel of melted brie makes for the ultimate lazy-day luxury. If you love warm, melty cheese starters, you should also try our Cozy Baked Burrata Appetizer for your next gathering.

Ingredients
- 8 lasagna pasta sheets (broken into 2-inch pieces)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon Diamond Crystal kosher salt
- 1/4 cup grated parmesan cheese
- 1 small wheel of Brie cheese (approx. 8 oz / 225g)
- 1 tablespoon honey (for drizzling)
- Fresh rosemary sprigs (for garnish)
Directions
- Bring a large pot of salted water to a boil and cook the lasagna sheets for about 8-9 minutes, just slightly past al dente.
- Drain the pasta thoroughly and pat the sheets completely dry with a clean kitchen towel to remove excess surface moisture.
- Cut or break the cooked lasagna sheets into chip-sized triangles or squares.
- In a large bowl, toss the pasta pieces with olive oil, garlic powder, Italian seasoning, smoked paprika, and kosher salt until evenly coated.
- Slice the top rind off the brie wheel, place it in a small oven-safe dish or on a piece of parchment paper, and set it in the center of the air fryer basket.
- Arrange the seasoned pasta pieces in a single layer around the brie wheel.
- Air fry at 380°F (193°C) for 8 to 10 minutes, shaking the basket halfway through, until the pasta chips are golden brown and crispy, and the brie is completely melted and gooey.
- Carefully transfer the melted brie and crispy chips to a serving platter, drizzle the cheese with honey, and garnish with fresh rosemary.
Notes
- We highly recommend using Diamond Crystal Kosher Salt; if you are using fine table salt, cut the measurement in half (use 1/2 teaspoon instead of 1 teaspoon).
- Drying the boiled pasta thoroughly is crucial because excess surface water creates steam in the air fryer, which prevents the oil from adhering properly and results in soggy, chewy chips instead of a crisp shatter.
- Keep a close eye on the pasta chips during the last 2 minutes of cooking; because of their low moisture content, they can go from perfectly golden to bitter and burnt in a matter of seconds.
- While the chips will lose some of their signature crunch after a day in the fridge, you can easily revive them by popping them back into a 350°F air fryer for 2 minutes.
- For the brie, slicing the top rind off before air frying allows it to melt evenly and makes it much easier to scoop up with your freshly air-fried chips.
Serving Suggestions
Serve this warm, bubbling cheese dip immediately while the brie is at its peak meltiness. Pair it with fresh elements to balance the rich, savory flavors.
- Drizzle with hot honey for a sweet and spicy kick.
- Serve alongside a vibrant Watermelon Feta Salad to balance the rich, warm cheese with crisp, refreshing fruit.
- Add a bowl of warm marinara sauce for dipping to lean into the classic lasagna flavors.
- Pair with a crisp, cold glass of Pinot Grigio or a bubbly Prosecco to cut through the creaminess of the brie.
- Scatter fresh pomegranate seeds over the melted brie for a festive pop of color and tartness.
Storage and Reheating
If you somehow end up with leftovers, store the pasta chips and the brie separately. Keep the chips in an airtight container at room temperature, and wrap the brie tightly in parchment paper before placing it in the fridge.
Do not freeze them.
The condensation from freezing will completely ruin the delicate starch structure of the chips, turning them into mush when thawed. To reheat the brie, pop it back into the air fryer at 350°F for about 3 to 4 minutes until it is molten again.
For the chips, a quick 2-minute blast in a 350°F air fryer will instantly wake up the oils and restore that satisfying, noisy crunch. Avoid the microwave at all costs, as it will make the pasta rubbery and sad, which is the exact opposite of what we want.

Ingredient Substitutes
If you need to swap out any ingredients, here are the best alternatives that still deliver excellent results:
- Lasagna Sheets: If you don't have lasagna sheets, bow-tie (farfalle) or penne pasta work beautifully, though they won't have the same flat, cracker-like surface.
- Brie Cheese: Camembert is an excellent direct substitute with a slightly earthier flavor profile, or you can use a high-quality goat cheese log.
- Olive Oil: Avocado oil or any neutral high-smoke-point oil can be used to coat the pasta sheets before air frying.
- Italian Seasoning: A simple blend of dried oregano, dried basil, and thyme will work perfectly in a pinch.
I hope this cheesy, crunchy creation brings a little bit of joy to your kitchen table this week. It is proof that sometimes the best recipes come from happy accidents and a little bit of air-fryer magic. Let me know how yours turns out, and happy snacking!
