Ingredients

  • 3 large eggs
  • 2 tablespoons whole milk
  • 1/4 cup shredded cheddar cheese

Directions

  1. Preheat your air fryer to 330°F (165°C) for 3 minutes.
  2. Generously grease a 6-inch cake pan or air-fryer-safe pan with the melted butter.
  3. In a medium bowl, vigorously whisk the eggs, whole milk, Diamond Crystal kosher salt, and black pepper until completely cohesive and slightly frothy.
  4. Stir in the shredded cheddar cheese, diced bell pepper, and chopped chives.
  5. Pour the egg mixture into the prepared pan and carefully place it into the air fryer basket.
  6. Air fry at 330°F (165°C) for 8 to 10 minutes, or until the center is just set and the top is lightly golden brown.
  7. Carefully remove the pan using tongs, let it cool for 1 minute, then slide the omelette onto a plate.

Notes

  • I highly recommend using Diamond Crystal kosher salt. If you only have Morton's kosher salt or fine table salt, cut the measurement in half (use 1/8 teaspoon) to avoid an over-salted breakfast.
  • Adding a splash of whole milk or heavy cream dilutes the egg proteins. This dilution prevents the protein matrix from bonding too tightly, resulting in a much softer, tender crumb.
  • Do not crank the air fryer past 330°F (165°C). High heat will cause the exterior of the omelette to burn and puff up violently before the liquid center has a chance to set.
  • While best enjoyed fresh, this omelette can be stored in the fridge. Note that the eggs will release a small amount of water (syneresis) as they sit, which is completely normal.
