  • 1/4 cup toasted pumpkin seeds (pepitas)
  • 3 tablespoons extra virgin olive oil (for dressing)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey or maple syrup
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1/4 teaspoon freshly cracked black pepper

Directions

  1. Preheat your oven to 400°F (200°C). Wrap the trimmed beets individually in aluminum foil with a tiny drizzle of olive oil and a pinch of salt, then place them on a baking sheet.
  2. Toss the dried chickpeas with one tablespoon of olive oil, cumin, garlic powder, and a pinch of salt, then spread them in a single layer on a separate parchment-lined baking sheet.
  3. Roast both the beets and the chickpeas in the oven. Remove the chickpeas after 20 to 25 minutes when they are golden and crispy, but continue roasting the beets for 40 to 45 minutes until a fork slides easily into the center.
  4. Let the beets cool until safe to handle, then use a paper towel to gently rub the skins off under cool running water before slicing them into bite-sized wedges.
  5. In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, kosher salt, and black pepper until completely emulsified.
  6. In a large serving bowl, lay down the fresh arugula, then scatter the roasted beet wedges, crispy chickpeas, crumbled feta, and toasted pumpkin seeds over the top.
  7. Drizzle the lemon dressing over the salad just before serving, and toss gently to combine.

Notes

  • We highly recommend using Diamond Crystal kosher salt. If you are using standard fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
  • The science behind the dressing is simple: beets contain a compound called geosmin, which gives them their signature earthy, almost muddy taste. The citric acid in fresh lemon juice chemically neutralizes geosmin, highlighting the beets' natural sweetness instead.
  • Keep a close eye on the chickpeas during the last 5 minutes of roasting. Because of their low moisture content, they can cross the line from beautifully crispy to bitter and burnt very quickly.
  • Once dressed, arugula wilts rapidly due to the acid breaking down its delicate cell walls. If you plan on having leftovers, store the roasted beets, crispy chickpeas, greens, and dressing in separate containers in the fridge.
