A creamy, crowd-pleasing Avocado BLT Pasta Salad packed with crispy bacon, juicy cherry tomatoes, and a rich avocado dressing that actually stays green.

Avocado BLT Pasta Salad
Why This Recipe Works:
  • Emulsified Dressing: Blending the avocado with Greek yogurt and lemon juice creates a stable emulsion that prevents oxidation and keeps the dressing bright green.
  • Starch Gelatinization: Rinsing the pasta in cold water stops the cooking process instantly, preventing the noodles from absorbing too much dressing and becoming soggy.
  • Salty-Smoky Balance: Thick-cut bacon cooked until shatteringly crisp provides the perfect textural contrast to the creamy avocado and juicy cherry tomatoes.

I still remember the humid July afternoon three years ago when I brought a bowl of gray, mushy pasta salad to my sister’s backyard housewarming party. I had prepped it the night before, thinking I was being incredibly organized, but the avocado had oxidized into a depressing shade of swamp green.

It was humiliating.

The problem lies in the delicate chemistry of the avocado's cellular structure, which releases polyphenol oxidase when sliced, turning the flesh brown the second it hits oxygen. Most recipes tell you to just squeeze some lime juice over the top, but that amateur trick fails because the acid doesn't coat the fats evenly. I tested this with four different mixing methods, and simply tossing everything together left the pasta dry and the avocado bruised.

The fix is surprisingly simple: we blend the avocado directly into a creamy emulsified dressing with Greek yogurt and lemon juice. This coats the pasta's starch gelatinization layer, creating a protective barrier that keeps the green vibrant for hours.

Trust me on this one.

If you love the classic flavor profile of a Best BLT Sandwich, you already know how crucial the balance of salty, smoky bacon and sweet, acidic tomatoes is. But translating those dry sandwich components into a cold pasta dish requires a dressing that clings to every noodle.

I used to make a Turkey Bacon Lettuce Tomato Salad that relied on heavy store-bought mayo, but it felt weighed down. Blending fresh avocado provides that luxurious mouthfeel without the grease.

Ingredients

  • 340 g (12 oz) rotini or fusilli pasta (I love using Tri Colored Rotini Pasta Salad noodles for visual pop)
  • 8 slices thick-cut bacon, chopped
  • 2 ripe avocados, pitted
  • 1/2 cup Greek yogurt (plain, full-fat)
  • 2 tbsp fresh lemon juice
  • 1/2 tsp garlic powder
  • 1 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1 cup cherry tomatoes, halved
  • 2 cups chopped romaine lettuce

Directions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Drain and rinse immediately under cold running water to stop the cooking process and remove excess surface starch.
  2. While the pasta cooks, render the chopped bacon in a cold skillet over medium heat. Tap the tongs against your hip while you wait, cooking until the bacon is shatteringly crisp, then fish it out with a slotted spoon onto a paper towel-lined plate.
  3. In a food processor or high-speed blender, combine the flesh of the two avocados, Greek yogurt, lemon juice, garlic powder, Diamond Crystal kosher salt, and black pepper. Blend until completely smooth and velvety.
  4. Transfer the cooled pasta to a large mixing bowl. Pour the creamy avocado dressing over the pasta and toss gently until every noodle is evenly coated.
  5. Fold in the halved cherry tomatoes, crisp bacon, and chopped romaine lettuce just before serving so the greens stay crisp.

Notes

  • Salt Conversion: Always use Diamond Crystal kosher salt for dressing; if using Morton's or fine table salt, cut the volume in half (use 3/4 tsp instead of 1 1/2 tsp) to avoid an over-salted disaster.
  • Science of Oxidation: The citric acid in the fresh lemon juice acts as a natural antioxidant, halting the polyphenol oxidase enzyme in the avocado from reacting with oxygen and turning brown.
  • Workflow Warning: Do not toss the romaine lettuce into the pasta salad if you are making this more than an hour in advance; the salt in the dressing will draw out the moisture from the leaves, leaving them sad, limp, and watery.
  • Storage Behavior: After a day in the fridge, the pasta will absorb some of the moisture from the dressing, making it slightly thicker; simply stir in a splash of cold water or a squeeze of lemon juice to loosen it back up.
  • Bacon Tip: Start your bacon in a cold skillet rather than a hot one. This slow-heating method renders the fat gradually, ensuring maximum crispiness without burning the edges.

Serving Suggestions

This pasta salad is the ultimate summer side dish, but it easily holds its own as a main lunch. Serve it chilled in wide, shallow bowls to show off the vibrant colors.

  • Pair it with grilled chicken breasts or juicy burgers straight off the grates.
  • Serve alongside a bowl of Creamy Pea and Turkey Bacon Pasta Salad for a double-pasta salad spread at your next barbecue.
  • Top with a handful of garlic-herb croutons for an extra layer of crunch.
  • Garnish with a pinch of smoked paprika or red pepper flakes for a subtle kick of heat.
  • Swap the romaine for fresh baby arugula if you prefer a peppery bite like in our Lemon Arugula Pasta Salad.

Storage and Reheating

Store any leftovers in an airtight container in the refrigerator for up to two days. Because we emulsified the avocado dressing with Greek yogurt and lemon juice, it holds its gorgeous green hue remarkably well without turning into a gray mess.

Do not freeze this.

The physics of freezing will destroy the delicate emulsion of the avocado dressing, causing it to separate into a watery, curdled disaster upon thawing. Additionally, the romaine lettuce will turn completely translucent and mushy.

When you are ready to eat the leftovers, give the salad a vigorous stir. If the noodles have soaked up too much of the dressing, simply splash in a teaspoon of cold water or olive oil to restore that glossy, creamy texture.

Ingredient Substitutes

If you need to swap things out based on what is currently hiding in your pantry, here are my favorite tested substitutions:

  1. The Pasta: If you don't have rotini, fusilli or farfalle work beautifully to trap the creamy dressing.
  2. The Greek Yogurt: Sour cream or a high-quality mayonnaise can be used in an equal 1:1 swap, though Greek yogurt keeps it lighter.
  3. The Bacon: For a vegetarian option, swap the bacon for smoky roasted chickpeas or a sprinkle of smoked paprika.
  4. The Greens: If romaine isn't your favorite, swap it for fresh baby spinach or a peppery arugula.

I hope this becomes your go-to dish for every sunny potluck and lazy Sunday lunch. It’s bright, incredibly satisfying, and guaranteed to actually stay green long enough for your guests to marvel at your culinary wizardry. Let me know how it goes, and happy cooking!
