Baked Herb Chicken Breast
A foolproof recipe for juicy, tender baked herb chicken breast seasoned with garlic, olive oil, and a vibrant blend of fresh rosemary, thyme, and oregano.
- Parchment paper acts as a moisture barrier, trapping steam to prevent the meat from drying out.
- Resting the meat before baking prevents the protein matrix from seizing up under sudden heat.
- Fresh, oil-soluble herbs release their aromatic compounds directly into the fat for deep flavor.
I still remember the exact Tuesday afternoon in my drafty first apartment when I baked my first chicken breast. It turned out with the depressing, squeaky texture of a dry yoga mat.
I was absolutely devastated by it.
Bear with me here, because the physics of this is fascinating. Most people throw cold meat straight from the fridge into a hot oven, causing muscle fibers to contract violently and squeeze out moisture. When you press your palm against raw chicken, it should feel yielding, not icy and stiff. I tested this with cheap aluminum pans that warped instantly, proving thermal mass matters.
The simple fix is a quick, room-temperature rest and a heavy hand with olive oil. Trust me on this one.
We are also using a parchment paper canopy to trap the steam as it bakes. This creates a self-basting environment that guarantees juicy meat every single time. It is hands down the easiest way to cook chicken.

Ingredients
- 4 boneless, skinless chicken breasts (approx. 200g each)
- 2 tbsp extra virgin olive oil
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh oregano, finely chopped
- 3 cloves garlic, grated
Directions
- Remove the chicken from the refrigerator 20 minutes before cooking to take off the chill. Preheat your oven to 400°F (200°C).
- Pat the chicken breasts completely dry with paper towels. Rub them generously with extra virgin olive oil, ensuring every nook is coated.
- In a small bowl, combine the grated garlic, Diamond Crystal kosher salt, black pepper, chopped rosemary, thyme, and oregano.
- Rub the herb mixture all over the chicken breasts, pressing it firmly so it clings to the meat.
- Place the chicken in a baking dish and cover loosely with a sheet of parchment paper. Bake for 18 to 22 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 to 10 minutes before slicing to allow the juices to redistribute. </
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume by half to avoid an over-salted disaster.
- Grating the garlic instead of mincing it releases more allicin, which combines with the oil-soluble flavor compounds in the fresh herbs to coat the chicken evenly.
- Do not skip the drying step; any surface moisture on the chicken will steam instead of roast, preventing the herbs from sticking and ruining the texture.
- After a day in the fridge, the leftover chicken will tighten up, so reheat it gently with a splash of chicken broth to restore its moisture.
Serving Suggestions
This versatile chicken pairs beautifully with almost any side dish. Here are my favorite ways to serve it to keep dinner exciting:
- Serve it alongside Creamy Garlic Mashed Potatoes That Steal the Show to soak up any pan juices.
- Pair it with Roasted Asparagus & Carrots – A Fresh Easter Side! for a light, nutrient-dense dinner.
- Slice the chicken thinly and toss it into a Garlic Herb Chicken Meal Prep – Easy Meal Prep bowl for healthy lunches throughout the week.
- Serve it with crispy Greek Roast Potatoes With Lemon And Feta for a Mediterranean-inspired feast.
Storage and Reheating
Leftover chicken can be stored in an airtight container in the refrigerator for up to four days. Make sure it cools completely before sealing the lid to prevent condensation from making the herbs soggy.
Do not freeze cooked chicken breasts.
The delicate protein fibers will break down during thawing. This results in a mealy, unappealing texture.
To reheat, place the sliced chicken in a skillet over medium-low heat with a tablespoon of water or chicken broth. Cover with a tight-fitting lid for three minutes to trap the steam. This gently warms the meat without drying it out.
Ingredient Substitutes
If you don't have everything on hand, don't panic. Here are some simple swaps that work beautifully:
- Fresh Herbs: If you only have dried herbs, use one-third of the amount specified, as dried herbs are much more concentrated.
- Garlic: You can substitute the fresh grated garlic with one teaspoon of garlic powder in a pinch.
- Olive Oil: Avocado oil or melted unsalted butter can be used instead of extra virgin olive oil.
- Acid Boost: If you want a bright, zesty kick, try marinating the chicken first in our Tangy Lemon Marinade. </
