Directions

  1. Mash the ripe banana in a small bowl until it is completely liquefied with no remaining chunks.
  2. Pour the heavy whipping cream, whole milk, maple syrup, vanilla extract, and kosher salt into a tall glass or jar.
  3. Add the smooth banana puree to the cream mixture.
  4. Submerge your handheld milk frother into the liquid, hold it at a slight angle, and froth for 30 to 45 seconds until thick and doubled in volume.
  5. Spoon the silky banana cold foam over your favorite iced coffee or cold brew and enjoy immediately.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have standard table salt, cut the measurement in half to a tiny pinch to avoid an overly savory foam.
  • The fat content in the heavy whipping cream is crucial because lipids stabilize the protein matrix of the milk, trapping the air bubbles created by the frother to prevent the foam from collapsing.
  • Do not over-froth the mixture past the 45-second mark, or you will accidentally initiate the butter-churning process, leaving you with sweet banana butter instead of pourable foam.

However, you can easily prep the liquid base ahead of time. Simply blend the banana, milk, and syrups together, store the liquid in an airtight jar for up to twenty-four hours, and froth it right before serving.
