  • 1 tsp rice vinegar

Directions

  1. Cut the extra-firm tofu into 1-inch cubes. Place them in a shallow bowl and pour the salted boiling water over them. Let sit for 10 minutes, then drain and pat thoroughly dry with a clean kitchen towel.
  2. Toss the dried tofu cubes with cornstarch in a large bowl until every side is evenly coated. Tap off any excess starch.
  3. Heat the neutral oil in a large non-stick skillet over medium-high heat. Add the tofu in a single layer, making sure they do not touch. Carefully flip each piece—tap your tongs against your hip if you need to release some kitchen tension—and cook for 3-4 minutes per side until golden brown and crispy.
  4. While the tofu cooks, whisk together the mayonnaise, sweet chili sauce, sriracha, and rice vinegar in a medium bowl until smooth.

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the measurement in half to avoid over-salting.
