Broccoli Cheese Stuffed Chicken
A comforting, juicy stuffed chicken breast recipe packed with fresh broccoli and a rich, melty cheese filling that actually stays inside the chicken.
- Cream cheese acts as an emulsifier, preventing the cheddar from splitting and leaking out of the chicken.
- Searing the chicken first creates a beautiful Maillard crust while sealing the pocket opening.
- Par-cooking the broccoli prevents steam from building up inside the chicken and bursting the pocket.
My first attempt at stuffed chicken ended with me scraping a sad, burnt puddle of cheddar off a cheap baking sheet. I stood in my tiny kitchen, tears of frustration stinging my eyes, wondering how it failed so spectacularly.
I had jammed twelve toothpicks into the meat, stabbing my thumb in the process. Yet, the cheese still escaped.
The physics of a stuffed chicken breast are tricky because lean breast meat lacks the fat buffer to stay juicy when overcooked. When you cut a pocket too wide, you destroy the protein matrix of the muscle fibers, which contract as they heat up and squeeze the filling out. Using pre-shredded cheese with anti-caking agents only worsens this, causing the fat to separate. If you love comforting chicken dinners but want to avoid these pitfalls, you might also enjoy our Creamy Low-Carb Chicken Casserole packed with broccoli goodness.
The fix is actually incredibly simple.
Par-cooking the broccoli removes excess water, while cream cheese binds the cheddar together. A quick sear in a hot skillet then locks in the juices before baking.

Ingredients
- 4 large boneless, skinless chicken breasts (about 200g/7oz each)
- 1 cup finely chopped broccoli florets
- 4 oz cream cheese, softened
- 1 cup freshly grated sharp cheddar cheese
- 1/2 tsp garlic powder
- 1 tsp Diamond Crystal kosher salt (or 1/2 tsp fine table salt)
- 1/2 tsp freshly cracked black pepper
- 1 tbsp olive oil
- 1 tbsp unsalted butter
Directions
- Preheat oven to 400°F (200°C). Steam or microwave the chopped broccoli for 1 minute until bright green, then pat completely dry with paper towels.
- In a medium bowl, mix the dried broccoli, cream cheese, cheddar cheese, garlic powder, and a pinch of salt until fully combined.
- Place chicken breasts on a cutting board. Use a sharp chef's knife to cut a horizontal pocket into the thickest part of each breast, being careful not to cut all the way through.
- Season the outside of the chicken breasts generously with Diamond Crystal kosher salt and black pepper. Stuff each pocket evenly with the broccoli cheese mixture.
- Heat olive oil and butter in a large oven-safe skillet (like cast iron) over medium-high heat. Sear the chicken for 3-4 minutes on one side until a golden-brown crust forms.
- Flip the chicken carefully, then transfer the skillet directly into the preheated oven. Bake for 12-15 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.
Notes
- We use Diamond Crystal kosher salt for all our testing; if you are using fine table salt or Morton's kosher salt, cut the volume measurement in half to avoid over-salting.
- Cream cheese is essential here because its high protein-to-fat ratio and emulsifiers stabilize the cheddar, preventing the cheese from splitting into a greasy pool.
- Watch your skillet temperature during the initial sear; if the butter begins to smoke or turn black, immediately slide the pan off the heat to prevent a bitter, burnt crust.
- After a day in the fridge, the cheese filling will firm up significantly, but reheating it too quickly in a microwave will cause the chicken to dry out and the cheese to leak.
- Always grate your own cheese from a block. Pre-shredded cheeses are coated in potato starch which ruins the creamy texture of the melt.
Serving Suggestions
Complete this comforting meal by pairing it with fresh, vibrant sides that cut through the richness of the cheese.
- A side of Creamy Garlic Mashed Potatoes to soak up any pan juices.
- A crisp, refreshing Watermelon Feta Salad to balance the warm, savory flavors.
- For another fun way to enjoy this classic flavor combo, try serving these Crispy Broccoli Cheese Bites as an appetizer.
- Oven-roasted asparagus spears or baby carrots.
- A slice of crusty garlic bread for wiping the skillet clean.
Storage and Reheating
Leftovers keep beautifully if handled with care.
Store any leftover chicken in an airtight glass container in the refrigerator for up to three days. The cheese filling will solidify as it cools, which actually makes it less prone to leaking when cold.
To reheat, avoid the microwave at all costs. It will turn the chicken into rubber and split the cheese.
Instead, place the chicken in a baking dish with a splash of chicken broth, cover it tightly with foil, and warm it at 350°F (175°C) for about 15 minutes. This gentle steam bath keeps the meat incredibly juicy.
Ingredient Substitutes
If you don't have everything on hand, these simple swaps will keep your dinner on track without sacrificing flavor.
- Broccoli: Swap with finely chopped baby spinach (squeezed completely dry) or par-cooked asparagus tips.
- Cheddar Cheese: Use Monterey Jack, Gruyère, or Swiss cheese for a different flavor profile.
- Cream Cheese: Mascarpone or thick Greek yogurt can work, though Greek yogurt will yield a slightly tangier filling.
- Chicken Breasts: Boneless, skinless chicken thighs can be used, though they are harder to pocket-cut; folding them over the filling works best.
This has quickly become one of those weeknight lifesavers in my home, mostly because it feels fancy but requires so little actual effort. I hope it brings a bit of cozy, cheesy joy to your kitchen table tonight.
