Directions

  1. Pat the chicken thighs dry with paper towels. In a small bowl, mix the smoked paprika, brown sugar, garlic powder, onion powder, kosher salt, and black pepper.
  2. Rub the spice mixture thoroughly over all sides of the chicken thighs, massaging it into the meat.
  3. In the bottom of your slow cooker, whisk together the tomato paste, apple cider vinegar, and 1/2 cup of the BBQ sauce.
  4. Place the seasoned chicken thighs into the slow cooker, turning them to coat slightly in the wet mixture.
  5. Cover and cook on LOW for 4 to 5 hours (or HIGH for 2 to 3 hours) until the chicken is completely tender and registers 165°F.
  6. Carefully transfer the chicken thighs to a large cutting board. Using two forks, shred the meat into bite-sized pieces.
  7. Strain the excess liquid from the slow cooker, leaving just a splash behind. Return the shredded chicken to the pot.
  8. Pour the remaining 1 cup of BBQ sauce over the chicken and toss well to combine. Cover and heat on LOW for 10-15 minutes until warmed through and glossy.

Notes

  • Salt Conversion: We highly recommend using Diamond Crystal kosher salt. If you are using Morton's kosher salt, reduce the amount by half (use 1.5 teaspoons instead of 1 tablespoon) to avoid an overly salty batch.
  • The Science of Thighs: Chicken thighs contain high amounts of collagen. During the low-and-slow cooking process, this collagen breaks down into gelatin, coating the meat fibers and keeping them incredibly succulent, whereas chicken breasts lack this structural advantage and dry out easily.
