Directions

  1. Place the eggs in a single layer in a small saucepan and cover with cold water by one inch. Bring to a rolling boil over high heat, then immediately cover, remove from heat, and let sit for 10 minutes.
  2. Transfer the eggs to an ice bath for 5 minutes to halt the cooking process, then peel the warm shells with your thumbs under cold running water.
  3. Peel the eggs and chop them into bite-sized pieces using a sharp chef's knife.
  4. In a medium bowl, mash the ripe avocado with the lemon juice, Diamond Crystal kosher salt, black pepper, and garlic powder using a fork until mostly smooth but still slightly chunky.
  5. Gently fold the chopped eggs and fresh chives into the avocado mixture until well combined and the green mixture clings to the chopped eggs.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you only have fine sea salt or table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
  • The citric acid in fresh lemon juice acts as a natural antioxidant, binding to the polyphenol oxidase enzymes in the avocado to prevent them from reacting with oxygen and turning brown.
  • Do not let your eggs sit in the hot water past the 10-minute mark; overcooking causes the iron in the yolk to react with the sulfur in the white, creating an unsightly green ring and a rubbery texture.
  • Because avocado contains active enzymes, this salad is best eaten within 4 hours of making; after a day in the fridge, the texture will become slightly watery as the cell walls break down.
