The fix is a simple two-step shaking method that coaxes the proteins in the pineapple juice and egg white into a stable, cloud-like foam. I tested this with four different shaking techniques, and the reverse dry shake won hands down.

Ingredients
- 2 oz Blanco Tequila (100% agave)
- 1 oz Fresh Pineapple Juice
- 0.75 oz Fresh Lime Juice
- 0.75 oz Blueberry Simple Syrup
- 1 Egg White (or 1 oz Aquafaba)
- 1 pinch Diamond Crystal Kosher Salt (approx. 0.5g)
- Fresh blueberries and a pineapple wedge for garnish
Directions
- Add the blanco tequila, fresh pineapple juice, lime juice, blueberry simple syrup, egg white, and salt to a cocktail shaker filled with ice.
- Shake vigorously for 15 seconds until your forearms ache and the shaker is frost-bitten and cold to the touch.
- Strain the liquid back into the shaker, discarding the ice completely.
- Shake again without ice (the dry shake) for another 15 seconds to build up a thick, luxurious foam.
- Double strain into a coupe glass and garnish with a skewer of fresh blueberries and a small pineapple wedge.
Notes
- I highly recommend using Diamond Crystal Kosher Salt; if you only have Morton's, use half the amount (a tiny pinch) to avoid over-salting.
- Fresh pineapple juice contains the enzyme bromelain, which acts as a natural foaming agent, working in tandem with the egg white to create a meringue-like head.
- Never dry shake with warm ingredients; ensure your syrup and juices are thoroughly chilled before they hit the shaker, or the egg white might curdle.
- This cocktail must be served immediately; after about 10 minutes, the foam will begin to separate and lose its velvety texture.
- If using aquafaba instead of egg white, shake for an extra 5 seconds to achieve the same frothy density.
