A cozy, nutrient-dense breakfast featuring roasted sweet potatoes topped with creamy, perfectly set eggs and crispy, salty bacon.

Breakfast Sweet Potatoes with creamy eggs and crispy bacon
Why This Recipe Works:
  • Par-baking the sweet potatoes gelatinizes the starches, ensuring a sweet, buttery texture before the eggs are even introduced.
  • A light brush of oil on the skins creates a thermal barrier, trapping steam inside to cook the flesh while crisping the exterior.
  • Adding the eggs during the last eight minutes of baking prevents the delicate protein matrix of the whites from turning rubbery.

My first attempt at baking eggs inside a sweet potato happened on a freezing Tuesday in my old apartment, where the radiator hissed like an angry cat. I was determined to make a cozy morning meal, but I ended up with a rock-hard potato and an egg yolk that looked like a dusty yellow marble.

It was tragic.

If you love comforting breakfasts like a warm Breakfast Casserole, you know how satisfying a hot dish is. But the physics of this specific combination can get annoying fast if you don't understand how heat transfers through dense tubers.

Sweet potatoes need serious time to soften, whereas delicate egg proteins turn rubbery in minutes.

I used to rely on simple Oven Baked Eggs for my morning routine. However, par-baking the potatoes first and scooping a shallow nest for the eggs completely solved my rubbery-white dilemma.

Trust me on this one.

Ingredients

  • 2 medium sweet potatoes (scrubbed clean)
  • 1 tsp olive oil
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 2 large eggs (at room temperature)
  • 4 slices bacon (cooked until crispy and crumbled)
  • 1 tbsp fresh chives (finely chopped)

Directions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Poke the sweet potatoes all over with a fork, rub them with olive oil, and place them on the baking sheet.
  3. Bake for 35 to 40 minutes, until a knife slides easily into the thickest part of the potato.
  4. Remove from the oven and let cool for 5 minutes. Cut a thin slice off the top of each potato horizontally, then use a spoon to gently scoop out about 3 tablespoons of flesh from the center, creating a well deep enough to hold an egg.
  5. Sprinkle a pinch of Diamond Crystal kosher salt and black pepper inside each well.
  6. Carefully crack one egg into each sweet potato well.
  7. Return to the oven and bake for 8 to 12 minutes, or until the egg whites are completely set but the yolks are still runny.
  8. Remove from the oven, top with crumbled crispy bacon and chopped fresh chives, and serve immediately.

Notes

  • Salt Conversions: I tested this with cheap table salt, which made the potato taste metallic and harsh. Stick to Diamond Crystal kosher salt; if using fine sea salt, cut the measurement in half.
  • Egg Temperature: Room temperature eggs cook more evenly because their protein matrix doesn't experience thermal shock when hitting the hot potato.
  • Workflow Warning: Watch the eggs closely after the 8-minute mark. Oven temperatures vary wildly, and you do not want to overcook the yolks.
  • Storage Behavior: Baked eggs do not reheat well. After a day in the fridge, the yolk turns into a chalky, unappealing puck.

Serving Suggestions

Complete your morning spread by pairing these savory, nutrient-dense sweet potatoes with bright, fresh sides that cut through the richness of the egg yolk and bacon.

  • A side of Crispy Avocado Hash Browns for an extra dose of healthy fats and crunch.
  • A simple green salad tossed in a light lemon vinaigrette.
  • Slices of ripe avocado sprinkled with flaky sea salt and chili flakes.
  • A hot cup of black coffee or a refreshing iced tea.

Storage and Reheating

If you have leftovers, store the par-baked sweet potato skins and scooped-out flesh in an airtight container in the fridge for up to four days. They hold up beautifully.

However, do not crack the eggs into the potatoes if you plan on storing them.

Reheating a pre-cooked egg in the microwave is a recipe for rubbery disaster. Instead, reheat the potato shell in a 350°F oven for ten minutes, then slide a fresh egg in to bake.

Your future self will thank you.

Ingredient Substitutes

Customize this breakfast to fit your pantry or dietary needs with these simple swaps.

  1. Bacon: Swap the pork bacon for turkey bacon or smoky tempeh strips to keep it vegetarian.
  2. Sweet Potatoes: Use garnet yams or even large russet potatoes if you prefer a classic savory base.
  3. Chives: Fresh green onions or chopped cilantro work beautifully in place of chives.
  4. Eggs: If you are avoiding eggs, fill the baked potato wells with a spoonful of black beans from a Southwestern Beef Sweet Potato Skillet and top with avocado.

There is something incredibly satisfying about slicing into a perfectly baked sweet potato and watching that golden yolk run. It makes a quiet morning feel like a luxury, even on a busy weekday. Grab your favorite skillet, fry up some bacon, and enjoy this cozy breakfast.
