Notes
- For the salt, I highly recommend Diamond Crystal kosher salt. If you only have fine table salt or Morton's, cut the measurement in half (use 1/4 tsp) to avoid over-salting.
- Cream cheese contains casein proteins that bind to the hydrophobic capsaicin in hot sauce, creating a stable emulsion that won't weep water into your avocados.
- Do not microwave the chicken while it is inside the avocado; heating avocado releases sulfur compounds that taste incredibly bitter and ruin the dish.
- Leftover stuffed avocados do not store well because the avocado flesh oxidizes and turns brown within 12 hours, even with lime juice.
