Ingredients
- 450g cooked chicken thighs, shredded (warm)
- 120g sour cream (or homemade bacon mayonnaise)
- 4 slices crispy bacon, crumbled
- 1/2 tsp Diamond Crystal kosher salt
- 30g melted unsalted butter
Directions
- Shred the warm cooked chicken thighs using two forks or your hands until the meat is finely pulled.
- Pour the melted unsalted butter over the warm shredded chicken and toss to coat thoroughly.
- Add the sour cream or bacon mayonnaise to the chicken and mix until completely emulsified.
- Fold in the crumbled crispy bacon and season with Diamond Crystal kosher salt.
- Chill in the refrigerator for at least 30 minutes before serving to let the fats set. </
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, use exactly half the amount (1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
- Shredding the chicken while it is still warm is crucial because the open protein matrix absorbs the melted butter and fats much better than cold, seized chicken fibers.
- When crisping your bacon for the crumble, cook it over medium-low heat and stir constantly; high heat will burn the milk solids in the fat and leave a bitter taste in your salad.
- After a day in the fridge, the animal fats will solidify slightly, making the salad thicker; simply let it sit on the counter for 5 minutes to soften before eating.

Storage and Reheating
Store this salad in an airtight glass container in the refrigerator for up to four days. I strongly advise against plastic containers because the animal fats tend to cling to the porous plastic, making them a nightmare to wash later.
Do not freeze this.
Freezing will completely destroy the emulsion of the sour cream and butter. When thawed, it will separate into a watery, unappealing mess that even the dog might question.
If the salad feels too stiff straight from the fridge, do not microwave it. Instead, tap the container against your palm and let it sit at room temperature for about ten minutes to let the butter soften naturally.
Ingredient Substitutes
If you need to swap things out based on what is in your pantry, here are the easiest conversions.
- Sour Cream: Swap with full-fat Greek yogurt or cream cheese softened with a splash of warm water.
- Chicken Thighs: You can use leftover rotisserie chicken, but make sure to mix in a little extra melted butter to compensate for the drier breast meat.
