Directions

  1. In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and kosher salt.
  2. Stir the mixture vigorously with a spoon until the chia seeds are evenly distributed and no clumps remain.
  3. Gently fold in the chopped cherries, pressing down slightly to release some of their juices into the oats.
  4. Divide the mixture into two clean glass jars or airtight containers.
  5. Seal the containers tightly and refrigerate for at least 4 hours, or preferably overnight, to allow the oats to fully hydrate.

Notes

  • I highly recommend using Quaker Old Fashioned Rolled Oats; generic store brands failed our tests because they are rolled too thin and dissolve into a slimy paste.
  • This recipe is calibrated for Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half (use 1/8 teaspoon) to avoid an overly salty bite.
  • Chia seeds are essential here because they contain hydrophilic mucilage, which absorbs liquid to form a gel. This gel stabilizes the liquid-to-oat ratio, preventing separation.
  • Do not skip the vigorous stirring step in the first minute of mixing. If you let the chia seeds sit without stirring, they will clump together at the bottom, leaving you with pockets of dry seeds and a watery top layer.
  • After about 48 hours in the fridge, the oats will continue to absorb liquid and become much thicker. If you eat them on day three, simply splash in a tablespoon of milk to loosen the texture back to its creamy state.
