Ingredients

  • 1 package (16 ounces) frozen potato and cheese pierogies (do not thaw)
  • 14 ounces smoked kielbasa, sliced into 1/2-inch rounds
  • 1 block (8 ounces) cream cheese, softened and cubed
  • 1 cup chicken broth
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • Sliced green onions for garnish

Directions

  1. Heat a large skillet over medium-high heat and sear the sliced kielbasa for 3-4 minutes until beautifully browned on both sides.
  2. In a medium bowl, whisk together the softened cream cheese, chicken broth, minced garlic, kosher salt, black pepper, and 1 cup of the shredded cheddar cheese until mostly smooth.
  3. Grease the insert of your slow cooker, then arrange half of the frozen pierogies in an even layer at the bottom.
  4. Top the pierogies with the seared kielbasa, chopped yellow onions, and half of the cream cheese mixture.
  5. Layer the remaining frozen pierogies on top, pour over the rest of the cream cheese mixture, and sprinkle the remaining 1 cup of cheddar cheese over the surface.
  6. Cover and cook on LOW for 3 hours (or HIGH for 1.5 to 2 hours) until the pierogies are tender and the cheese is bubbly and melted.
  7. Garnish with sliced green onions before serving.

Notes

  • I highly recommend using Diamond Crystal Kosher Salt; if you are using fine table salt or Morton's, cut the measurement in half (use 1/4 teaspoon) to avoid an over-salted dish.
  • Using full-fat cream cheese is crucial because the milk fat acts as an emulsifier, keeping the cheddar cheese from breaking into a greasy, separated oil pool under slow heat.
  • Do not leave this on the "warm" setting for more than 30 minutes after cooking, or the bottom layer of pasta will scorch and stick to your crockpot insert.
  • As this casserole cools in the fridge, the starches in the pierogies will continue to absorb moisture, making the sauce significantly thicker the next day.
