Directions

  1. Drain the chickpeas in a colander and rinse them thoroughly under cold water. Pat them completely dry with a clean kitchen towel.
  2. In a medium mixing bowl, combine the full-fat cottage cheese, fresh lemon juice, extra virgin olive oil, Diamond Crystal kosher salt, and cracked black pepper. Whisk vigorously with a fork until the dressing is smooth and slightly emulsified.
  3. Toss in the dried chickpeas, diced Persian cucumbers, minced red onion, and chopped fresh dill.

Notes

  • We highly recommend using Good Culture full-fat cottage cheese. If using standard grocery store brands, note that 1 cup of full-fat cottage cheese equals about 225 grams.
  • Full-fat cottage cheese contains casein proteins that emulsify beautifully with the acid in lemon juice, creating a thick, cohesive dressing rather than a watery separation.
  • Do not skip drying the chickpeas. Any residual moisture on the beans will dilute the dressing, causing it to slide off and pool at the bottom of your bowl.
  • After 24 hours in the fridge, the cucumbers will release water due to osmosis, making the salad slightly runnier. Give it a vigorous stir before eating to re-emulsify.
