Ingredients
- 225g (8 oz) cream cheese, softened
- 115g (1/2 cup) sour cream
- 60g (1/4 cup) mayonnaise (Duke's preferred)
- 150g (1.5 cups) shredded mozzarella cheese, divided
- 50g (1/2 cup) freshly grated Parmesan cheese
- 225g (8 oz) raw shrimp, peeled, deveined, and chopped into bite-sized pieces
- 225g (8 oz) lump crab meat, drained and picked through for shells
- 150g (5 oz) fresh baby spinach
- 2 cloves garlic, minced
- 1 tsp Old Bay seasoning
- 1/2 tsp Diamond Crystal kosher salt
- 1 tsp cornstarch
Directions
- Preheat your oven to 375°F (190°C). Lightly grease a 1.5-quart baking dish.
- Heat a splash of olive oil in a skillet over medium heat. Sauté the chopped shrimp and minced garlic for 2 to 3 minutes until the shrimp just turns pink; fish them out with a slotted spoon and set aside. Sautéing the garlic in olive oil first coaxes out those oil-soluble flavor compounds, infusing the entire base.

Notes
- We highly recommend using Duke's mayonnaise for its high egg-yolk content, which aids in emulsification. If using Diamond Crystal kosher salt, use 1/2 teaspoon; if substituting fine table salt, reduce this to 1/4 teaspoon.
