Ingredients

Directions

  1. In a small saucepan, combine the fresh blueberries, balsamic vinegar, honey, and Diamond Crystal kosher salt over medium heat.
  2. Cook for 6-8 minutes, mashing the berries gently with a fork, until the mixture thickens into a jam-like compote. Remove from heat and let cool slightly.
  3. Lay out the sourdough slices on a clean cutting board. Spread a generous layer of the cooled blueberry compote on two of the slices.
  4. Top the compote with the freshly grated sharp white cheddar cheese, distributing it evenly to the edges.
  5. Close the sandwiches with the remaining bread slices. Spread a thin, even layer of mayonnaise on the outer sides of both sandwiches.
  6. Heat a cast-iron skillet over medium-low heat and melt the butter. Place the sandwiches in the skillet.
  7. Cook for 4-5 minutes per side, pressing down gently with a spatula, until the bread is deeply golden brown and the cheese is fully melted. Serve immediately.

Notes

  • Brand Recommendation: Use Duke's or Hellmann's mayonnaise for the exterior crust. If using Diamond Crystal kosher salt, use 1/2 tsp; if using Morton's, reduce to 1/4 tsp.
  • Science of Melting: Freshly grated cheese melts better because pre-shredded cheese is coated in potato starch or cellulose, which disrupts the protein matrix and prevents a smooth melt.
