Ingredients

  • 1/4 cup vodka
  • 1 cup panko breadcrumbs
  • High-smoke point oil for shallow frying
  • 4 brioche buns
  • 2 tablespoons unsalted butter, softened
  • 1 clove garlic, cut in half
  • 2 cups romaine lettuce, washed and shredded
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup creamy Caesar dressing

Directions

  1. Season the pounded chicken breasts evenly with the Diamond Crystal kosher salt and let them sit at room temperature for 15 minutes to dry-brine.
  2. In a shallow bowl, whisk together the all-purpose flour, cornstarch, baking powder, cold water, and vodka until a smooth, pancake-like wet batter forms.
  3. Place the panko breadcrumbs in a separate shallow dish next to the wet batter.
  4. Dip each chicken breast into the wet batter, letting the excess drip off, then press firmly into the panko breadcrumbs until completely coated on all sides.
  5. Heat 1 inch of oil in a heavy skillet to 350°F (175°C). Tap your tongs against your hip to get ready, then carefully lower the chicken into the hot oil.
  6. Fry the chicken for 4 to 5 minutes per side, or until the crust is deeply golden brown and the internal temperature reaches 165°F (74°C). Fish them out and let them drain on a wire rack.
  7. Spread softened butter on the cut sides of the brioche buns. Toast them in a dry skillet over medium heat until golden, then rub the warm toasted surface gently with the cut side of the garlic clove.
  8. Toss the shredded romaine lettuce with the Caesar dressing and grated Parmesan cheese in a medium bowl.
  9. Assemble the sandwiches by placing a crispy chicken cutlet on each bottom bun, piling the dressed Caesar salad on top, and capping with the top bun.

  • I highly recommend using Diamond Crystal kosher salt; if you only have standard table salt, cut the measurement in half (use 1.5 teaspoons instead of 1 tablespoon) to avoid over-salting.
