Directions
- Preheat your grill or grill pan to medium-high heat (about 400°F).

- Slice the steak thinly against the grain, then rough-chop it into bite-sized pieces so it stays inside the quesadilla.
- Lay the tortillas flat and sprinkle cheese over one half of each tortilla, then top with the chopped steak and a sprinkle of fresh cilantro.
- Fold the empty half of the tortilla over the filling to create a half-moon shape, pressing down firmly to compact it.
- Brush the top outside surface of each quesadilla with a thin, even layer of mayonnaise.
