Ingredients

  • 1 sheet puff pastry (thawed, preferably Dufour brand)
  • 6 oz high-quality deli ham (thinly sliced)
  • 4 oz Gruyère cheese (grated)
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 large egg (beaten, for egg wash)
  • 1 tsp Diamond Crystal kosher salt
  • Freshly cracked black pepper

Directions

  1. Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface into a 12x12-inch square, then cut it into 12 equal smaller squares.
  3. Place the squares on one prepared baking sheet and prick them all over with a fork to limit uneven rising.
  4. Place a second sheet of parchment paper over the pastry squares, then place the second baking sheet directly on top to weigh them down.
  5. Bake for 15 minutes until golden and crisp, then remove the top baking sheet and top parchment paper.
  6. Mix the Dijon mustard and honey in a small bowl, then brush a thin layer onto 6 of the baked pastry squares.
  7. Top each brushed square with ham and grated Gruyère, then season with Diamond Crystal kosher salt and black pepper.
  8. Place the remaining 6 pastry squares on top of the cheese to create stacks, then return to the oven for 5 minutes until the cheese is fully melted.

Notes

  • For salt conversions, 1 teaspoon of Diamond Crystal kosher salt equals roughly 1/2 teaspoon of standard table salt.
  • Gruyère is chosen because its specific protein matrix allows it to melt smoothly without releasing excess water or oil.
  • Keep a close eye on the oven during the final 5 minutes of baking, as the honey in the mustard can burn quickly if left unattended.
  • Puff pastry loses its crispness in the fridge after 24 hours as starch retrogradation occurs and moisture migrates from the ham.

Storage and Reheating
