A warm, buttery, flaky Peach Danish made easy with puff pastry and a luscious cream cheese filling, perfect for a special Mother's Day breakfast.

Peach Danish
Why This Recipe Works:
  • Store-bought puff pastry provides instant, reliable lamination with dozens of paper-thin layers of butter that puff up beautifully in a hot oven.
  • A splash of fresh lemon juice in the cream cheese cuts through the rich dairy, balancing the sweet, jammy peaches.
  • Brushing the pastry borders with an egg wash seals the edges and creates a gorgeous, bakery-style golden sheen.

My mother once tried to make danishes from scratch on a rainy Tuesday in May, her hair pinned up with a yellow pencil, her forearms aching as she rolled out yeast dough that stubbornly kept snapping back like an angry rubber band.

She ended up throwing the rolling pin into the sink, leaving us to eat dry toast while she declared puff pastry a conspiracy.

The science behind this is simple: traditional danish dough relies on laminating cold butter into a yeast-leavened protein matrix, which requires hours of chilling and rolling.

If that butter gets even a tad warm, it melts into the flour, destroying those distinct, flaky layers.

It turns into a greasy brick.

By using store-bought puff pastry, we bypass the tedious folding process entirely, while still achieving that shatteringly crisp texture. We pair it with a quick cream cheese filling and ripe peaches, which makes this just as impressive as our beloved Peach Pie Bars but with half the effort.

Trust me, this method is absolutely foolproof.

Ingredients

  • 1 sheet puff pastry, thawed but cold
  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon juice
  • 2 ripe peaches, thinly sliced
  • 1 large egg, beaten (for egg wash)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tsp milk (for glaze)
  • 1/4 tsp Diamond Crystal kosher salt

Directions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, vigorously beat the softened cream cheese, granulated sugar, vanilla extract, lemon juice, and Diamond Crystal kosher salt with a wooden spoon until completely smooth and free of lumps.
  3. Unroll the cold puff pastry sheet onto a lightly floured surface and cut it into 6 equal rectangles.
  4. Place the rectangles on the prepared baking sheet, then use a sharp knife to lightly score a border about 1/2-inch from the edge of each rectangle, being careful not to cut all the way through.
  5. Spoon about 1 tablespoon of the cream cheese mixture into the center of each rectangle, spreading it evenly within the scored border.
  6. Arrange 3 to 4 thin peach slices over the cream cheese filling, overlapping them slightly.
  7. Brush the exposed pastry borders with the beaten egg wash to ensure a deep golden color.
  8. Bake for 18 to 20 minutes, or until the pastry is puffed and deeply golden brown.
  9. Let cool on a wire rack for 10 minutes, then whisk the powdered sugar and milk together and drizzle over the warm danishes before serving.

Notes

  • I highly recommend using Pepperidge Farm puff pastry sheets; I tested this with three generic supermarket brands, and they failed because the fat content was too low, causing the pastry to turn into a dry, cardboard-like sheet.
  • Bear with me here, because the chemistry of this next step is crucial: adding a pinch of Diamond Crystal kosher salt (about 1/4 teaspoon, or 1/8 teaspoon of standard table salt) to the cream cheese is essential because sodium ions suppress bitterness and enhance the natural sweetness of the peaches.
  • Keep a close eye on the oven during the last 3 minutes of baking; the sugar in the peaches and the egg wash can transition from beautifully caramelized to scorched incredibly fast.
  • After a day in the fridge, the moisture from the peaches will inevitably soften the pastry; to restore that shatteringly crisp texture, reheat them in a 350°F oven for 5 minutes rather than using the microwave.

Serving Suggestions

These danishes are best enjoyed warm, ideally with a hot cup of coffee or as part of a festive morning spread.

  • Serve alongside a platter of fresh fruit or our vibrant Peach and Blueberry Salad with Feta.
  • Pair with a savory breakfast option like a classic French Toast or a hearty egg scramble.
  • Drizzle with a touch of warm honey or maple syrup right before serving for extra indulgence.
  • Accompany with a batch of warm, freshly baked Glazed Orange Rolls to give your guests plenty of sweet options.

Storage and Reheating

If you somehow end up with leftovers, let the danishes cool completely to room temperature on a wire rack before storing.

Place them in a single layer inside an airtight container.

They will keep in the refrigerator for up to 3 days, though the pastry will lose some of its initial crispness as the moisture from the peaches migrates into the crust.

Avoid the microwave.

Instead, pop them into a 350°F (175°C) oven or toaster oven for 5 to 7 minutes until the pastry crisps up and the cream cheese center is warm.

Ingredient Substitutes

If you don't have everything on hand, here are a few simple swaps that work beautifully without ruining the recipe.

  1. Peaches: Swap the fresh peaches for ripe nectarines, plums, or even a handful of fresh berries if peaches aren't in season.
  2. Cream Cheese: You can use mascarpone cheese for an even richer, slightly sweeter filling.
  3. Puff Pastry: If you are feeling adventurous, you can use homemade pie dough, though it won't puff up as high.
  4. Glaze: Replace the milk in the glaze with fresh lemon juice for a bright, tangy citrus drizzle.

There is something incredibly satisfying about pulling a tray of golden, bubbling pastries out of your own oven, especially when it took less than half an hour of actual work. Whether you are making these for a special Mother's Day brunch or just a quiet Sunday morning, they bring all the charm of a fancy bakery right into your kitchen.
