Directions

  1. Heat the toasted sesame oil in a large, deep skillet or wok over medium-high heat until shimmering.
  2. Add the ground chicken to the skillet, using a wooden spoon to break the meat apart and pressing it firmly against the hot metal to maximize surface contact. Season with Diamond Crystal kosher salt and black pepper, cooking until browned and cooked through, about 5 to 6 minutes.
  3. Push the chicken to the sides of the pan to create a well in the center, then add the minced garlic and grated ginger to this empty space, letting them sizzle in the hot oil for 30 seconds until fragrant.
  4. Stir the garlic and ginger into the chicken, then dump in the shredded green cabbage and carrots. Tossing a massive pile of raw cabbage can feel a tad clumsy at first, but it will shrink down quickly.
