- Seal the bottle tightly and let it sit at room temperature (around 70-75°F) for 24 to 48 hours, checking the carbonation daily by gently burping the bottle.
- Once you hear a strong hiss and see active bubbles rising, transfer the bottle to the refrigerator to chill completely and halt the fermentation process before serving.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you are using fine sea salt or table salt, reduce the amount by half (use just a tiny pinch, about 1/16 tsp) to avoid an overly savory undertone.
- Chlorine-free filtered water is absolutely essential because municipal tap water contains chlorine and chloramines designed to kill bacteria, which will neutralize the active Lactobacillus in your whey and prevent carbonation.
- Never use decorative glass bottles from craft stores for this recipe; they are not rated for pressure and can easily shatter under the carbon dioxide buildup. Always use heavy-duty, swing-top bottles designed specifically for home brewing.
- As the soda sits in the fridge, the yeast and bacteria will continue to slowly consume the remaining sugars, meaning the drink will become progressively less sweet and more tart over the course of a week.
- Ensure your whey is strained from plain, active-culture yogurt or kefir; pasteurized or ultra-filtered whey protein powders will not work as they contain no live cultures.
