Juicy, tender chicken breast cubes marinated in garlic, herbs, and Greek yogurt, grilled to charred perfection, and tossed in a rich garlic-butter Parmesan glaze.

Garlic Parmesan Chicken Skewers
Why This Recipe Works:
  • Lactic acid in the yogurt breaks down proteins gently without turning the chicken mushy.
  • The emulsified garlic butter glaze clings to the charred edges for an intense burst of flavor.
  • High-heat grilling triggers the Maillard reaction quickly, sealing in moisture before the breast dries out.

Last July, I stood on my tiny, wind-swept balcony clutching a pair of cheap metal tongs, desperately trying to pry stuck chicken breast cubes off a screaming-hot grill grate. Every single piece tore, leaving behind a sad, charred crust of dry meat.

It was a total disaster.

Chicken breast is notoriously unforgiving on the grill because it lacks the protective fat of thighs, causing the protein matrix to contract rapidly and squeeze out moisture at high heat. Most marinades rely too heavily on sugar or acid, which burn before the interior cooks. I learned this the hard way after serving what tasted like garlic-scented cardboard to my friends.

The simple fix is a Greek yogurt marinade to protect the meat. Lactic acid gently tenderizes, while the fat keeps everything juicy.

Trust me, this method never fails.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup plain full-fat Greek yogurt
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, finely grated (for the glaze)
  • 1 tbsp fresh flat-leaf parsley, finely chopped

Directions

  1. In a large mixing bowl, whisk together the Greek yogurt, olive oil, minced garlic, lemon juice, dried oregano, kosher salt, and black pepper until smooth.
  2. Add the cubed chicken to the bowl, tossing with your hands until every single piece is thoroughly coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving a tiny bit of space between each piece to ensure even heat circulation.
  4. Preheat your outdoor grill to medium-high heat (about 400°F/204°C) and clean the grates thoroughly. Tap your tongs against your hip to get ready, then lightly oil the grates.
  5. Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until the chicken is beautifully charred and the internal temperature reaches 165°F (74°C).
  6. While the chicken is grilling, whisk the melted butter, grated Parmesan, grated garlic, and chopped parsley in a small bowl to create the glaze.
  7. Immediately brush the warm garlic Parmesan glaze over the hot skewers right as they come off the grill, allowing the cheese to melt into the nooks and crannies.

Notes

  • Salt Conversion: This recipe uses Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half (use 1/2 teaspoon) to avoid over-salting.
  • The Science of Yogurt: Lactic acid in Greek yogurt breaks down proteins much more gently than harsh vinegar-based marinades, ensuring the chicken stays tender rather than turning mushy.
  • Workflow Warning: Do not brush the Parmesan glaze onto the chicken while it is still over the direct flame. The cheese will burn instantly, stick to the grates, and ruin your hard work.
  • Storage Behavior: Because the glaze contains real butter, it will solidify and look dull once refrigerated. Reheat gently to melt the butter back into a luscious sauce.
  • Parmesan Quality: Pre-grated Parmesan in the green shaker bottle failed every single test because the added cellulose prevents it from melting smoothly into the butter glaze. Use freshly grated cheese.

Serving Suggestions

These savory skewers are incredibly versatile and pair beautifully with bright, fresh sides that balance the rich garlic butter glaze. Here are a few of my favorite ways to serve them:

Storage and Reheating

If you happen to have leftovers, slide the chicken off the skewers before storing. Place the pieces in an airtight glass container; they will keep happily in the fridge for up to three days.

Do not freeze these.

The cooked chicken breast will dry out completely upon thawing, turning your beautifully tender meat into a spongy, sad mess. Keep it in the fridge and eat it quickly.

To reheat, avoid the microwave at all costs unless you enjoy rubbery poultry. Instead, warm a splash of chicken broth in a skillet over medium-low heat, add the chicken, and cover with a lid for three minutes to steam it back to life.

Ingredient Substitutes

If you don't have everything on hand, don't panic. Here are a few easy swaps that work beautifully:

  1. Chicken Thighs: Swap the breasts for boneless, skinless chicken thighs if you prefer dark meat. They are much more forgiving on the grill.
  2. Sour Cream: If you don't have Greek yogurt, full-fat sour cream works as an excellent tenderizing substitute due to its similar lactic acid content.
  3. Pecorino Romano: Swap the Parmesan for Pecorino Romano if you want a sharper, saltier bite that stands up boldly to the garlic.

I hope these skewers bring as much joy to your backyard as they do to mine. Just remember to keep an eye on that grill, tap your tongs with confidence, and don't skimp on the butter. Happy grilling!
