Ingredients

  • 2 cups (450g) full-fat Greek yogurt (Fage 5% is highly recommended)
  • 1.5 cups fresh strawberries, hulled and finely chopped
  • 1/4 cup honey or maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp finely grated lemon zest
  • 1/2 tsp vanilla extract
  • 1/4 tsp Diamond Crystal kosher salt (or 1/8 tsp fine table salt)

Directions

  1. In a medium bowl, combine the chopped strawberries with one tablespoon of the honey and the lemon juice. Let them sit for 10 minutes to macerate and release their sweet juices.
  2. In a separate bowl, whisk together the Greek yogurt, remaining honey, lemon zest, vanilla extract, and salt until completely smooth and creamy.
  3. Gently fold the macerated strawberries and all their accumulated juices into the yogurt mixture, leaving some beautiful red streaks.
  4. Spoon the mixture carefully into your popsicle molds, tapping the molds firmly against the counter to remove any trapped air pockets.
  5. Insert the popsicle sticks and freeze for at least 4 hours, or until completely solid.
  6. To unmold, run the outside of the molds under warm water for 10 seconds, then gently pull the sticks to release.

Notes

  • I highly recommend Fage 5% Greek yogurt. If you use a lower-fat brand, the texture will be significantly icier.
  • Macerating the strawberries in lemon juice and honey draws out their water content via osmosis. This prevents the fruit from freezing into solid, tooth-shattering ice chunks.
  • Do not skip tapping the molds on the counter. Yogurt is thick, and if you don't tap them, you will end up with large, hollow air gaps at the bottom of your popsicles.
  • After 24 hours in the freezer, these popsicles will become firmer. Let them sit on the counter for 3 to 5 minutes before eating for the absolute best, creamiest texture.
