Ground Lamb Pita Wraps
A quick, deeply flavorful weeknight dinner featuring spiced ground lamb, crisp fresh vegetables, and a cool yogurt sauce stuffed inside warm pita bread.
- High-heat searing renders out excess lamb fat while creating crispy, deeply caramelized bits.
- Spicing the meat with warm cumin and coriander blooms the oil-soluble flavor compounds.
- The contrast between hot, spiced meat and cold, crisp cucumbers creates a perfect sensory balance.
I still remember the evening I dropped an entire cast-iron skillet of spiced lamb directly onto my kitchen floor. My favorite canvas sneakers never recovered from that grease splatter.
My clumsy hands simply gave up that night.
But that disaster taught me a valuable lesson about fat rendering and thermal mass. Ground lamb is notoriously fatty, and if you do not cook it in a preheated skillet, you end up boiling the meat in its own greasy juices. This brand of cheap non-stick pan failed every test because it couldn't hold heat.
The simple fix is using a screaming-hot cast-iron pan. This triggers the Maillard reaction instantly for crispy edges.
Trust me on this one.

Ingredients
- 500g ground lamb
- 1 tbsp olive oil
- 1.5 tsp Diamond Crystal kosher salt (or 3/4 tsp fine table salt)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 2 cloves garlic, minced
- 4 pocket pita breads, warmed
- 1 cup English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Fresh mint leaves for garnish
Directions
- Heat a large cast-iron skillet over medium-high heat until lightly smoking.
- Add the olive oil, then add the ground lamb, breaking it up with a wooden spoon.
- Season with Diamond Crystal kosher salt, cumin, coriander, and smoked paprika.
- Cook without moving for 3 minutes to develop a deep brown crust, then stir and cook for another 4-5 minutes until fully browned.
- Toss in the minced garlic during the last minute of cooking so it doesn't burn.
- Drain any excess fat from the skillet, leaving just enough to keep the meat glossy.
- Stuff the warmed pita pockets with the spiced lamb, diced cucumbers, tomatoes, and red onions.
- Drizzle generously with tzatziki sauce and garnish with fresh mint. </
Notes
- Salt Conversion: We use Diamond Crystal kosher salt for its light, flaky texture. If you are using standard table salt, cut the measurement in half to avoid over-salting.
- Spice Blooming: Adding the spices directly to the lamb as it renders allows the oil-soluble flavor compounds to dissolve into the fat, distributing the flavor evenly.
- Garlic Timing: Always add your minced garlic during the final minute of browning. Garlic burns easily in hot lamb fat, which turns the entire dish bitter.
- Storage Behavior: Leftover lamb fat will solidify into a white, chalky layer in the fridge. This is completely normal and will melt back into a glossy sauce once reheated.
Serving Suggestions
These wraps are incredibly satisfying on their own, but you can easily turn them into a complete Mediterranean feast with a few simple additions.
- Serve alongside our Greek Beef Pita Wraps if you want to offer a variety of proteins for a crowd.
- Swap the standard tzatziki for the creamy dressing from our Tzatziki Chicken Salad to add a punch of extra herbs.
- Pair with a side of crispy fries dusted with oregano and lemon juice.
- Serve with a side of Turkish Lahmacun to keep the flatbread theme going.
Storage and Reheating
Store the leftover spiced lamb in an airtight glass container for up to four days. Keep the fresh vegetables and pita bread completely separate to prevent everything from turning into a soggy mess.
Cold lamb fat looks unappealingly chalky.
Think about this in terms of physics: that fat needs heat to liquefy and become delicious again. Avoid the microwave here.
Instead, reheat the lamb in a dry skillet over medium heat for about five minutes. Toss it around until it sizzles and gets those crispy edges back. Then, stuff it into a freshly warmed pita.
Ingredient Substitutes
If you need to adapt this recipe for dietary needs or pantry availability, here are the easiest swaps:
- Ground Beef: If lamb is too gamey or hard to find, ground beef works beautifully. You can also try our Mediterranean Ground Beef Wrap for a similar flavor profile.
- Greek Yogurt: If you don't have tzatziki, plain Greek yogurt mixed with a squeeze of lemon juice and a pinch of salt is a quick fix.
- Gluten-Free: Swap the pita bread for gluten-free wraps or serve the spiced meat over a bed of seasoned rice.
I hope this quick dinner brings a little warmth and ease to your busy weeknight routine!
