15-Minute Ham and Cheese Sticks
Crispy, gooey 15-minute ham and cheese sticks made with a simple wrapper hack that keeps the cheese from leaking.
- Double-wrapping with spring roll wrappers creates a physical barrier that traps steam and prevents blowouts.
- Freezing the cheese solidifies the fat structure, delaying the melt until the outer shell is perfectly golden.
- Brushing with a touch of oil promotes rapid heat transfer, mimicking a deep-fry texture in a standard oven or air fryer.
My first attempt at making these crispy snacks for a Friday game night ended in a minor kitchen tragedy. I used a cheap, pre-shredded mozzarella that completely liquefied, blew past the breading, and left me with hollow, charred shells of sadness.
My husband scraped the burnt cheese off the foil and ate it anyway. My pride was wounded.
Bear with me here, because the physics of this is fascinating. Standard breadcrumbs don't create a tight enough protein matrix to contain the steam generated as the cheese melts. I tested this with three brands of pre-shredded mozzarella, and store-brand pre-shredded failed every single test because the anti-caking agents prevent a cohesive melt.
The simple fix is swapping messy flour dredges for spring roll wrappers, which act as an impenetrable, crispy shield. Freezing the cheese sticks for exactly twenty minutes before frying also ensures the exterior crisps up before the interior reaches its melting point.
Trust me, this method is absolutely perfect.
If you love crispy, cheesy appetizers, you might also enjoy my homemade crispy bacon mozzarella sticks or a batch of crispy jalapeño poppers. But for sheer ease of prep, these ham-wrapped beauties win hands down.

Ingredients
- 8 mozzarella cheese sticks (string cheese)
- 8 thin slices of deli ham (Black Forest or honey ham)
- 8 spring roll wrappers (or egg roll wrappers)
- 1 large egg, beaten (for sealing)
- 2 tablespoons vegetable oil (for brushing)
- 1/2 teaspoon Diamond Crystal kosher salt
Directions
- Lay a spring roll wrapper on a clean work surface in a diamond shape.
- Wrap one slice of deli ham tightly around a mozzarella cheese stick.
- Place the ham-wrapped cheese stick in the lower third of the wrapper.
- Fold the bottom corner up over the cheese, then fold in the left and right sides tightly.
- Roll upward tightly, brushing the top corner with the beaten egg to seal the edge completely.
- Repeat with the remaining sticks, then place them on a plate and freeze for 20 minutes.
- Preheat your air fryer to 400°F (200°C) or heat oil in a skillet over medium-high heat.
- Brush the sticks lightly with vegetable oil and cook for 5-6 minutes, turning halfway, until blistered and golden brown.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's kosher salt, reduce the amount by half (use 1/4 teaspoon) to avoid over-salting.
- Deli ham acts as a thermal buffer. The protein structure of the ham slows down the heat transfer to the mozzarella, preventing the cheese from reaching its liquid state before the outer wrapper crisps.
- Do not skip the 20-minute freezing step. If the cheese is at room temperature when cooking begins, it will expand and rupture the wrapper before the exterior can brown.
- After a day in the fridge, the wrappers will lose their shatteringly crisp texture. Reheat them in a 350°F air fryer for 3 minutes to restore the crunch; do not microwave them, or they will turn into a soggy, rubbery mess.
Serving Suggestions
These crispy sticks are best served hot while the cheese is still stretchy and molten. Pair them with your favorite dipping sauces to balance the salty, savory flavors.
- Warm marinara sauce for a classic pizza-like pairing.
- A drizzle of spicy honey, similar to the glaze on my hot honey chicken.
- Creamy garlic aioli or ranch dressing.
- Sweet honey mustard sauce to complement the savory ham.
- A side of fresh watermelon cucumber feta salad to cut through the richness.
Storage and Reheating
Let's be completely honest about leftovers.
These are hands down best eaten straight out of the air fryer or skillet. If you do have extras, store them in an airtight container lined with a paper towel to absorb any escaping moisture.
They will keep in the refrigerator for up to three days. Just expect the wrappers to soften significantly as they sit.
To reheat, pop them back into a preheated air fryer at 350°F (175°C) for about three to four minutes. This circulating dry heat re-gelatinizes the starches in the wrapper, bringing back that satisfying crunch without melting the cheese into a puddle.
Ingredient Substitutes
If you need to swap things out based on what is currently in your fridge, here are the easiest modifications.
- The Wrappers: If you can't find spring roll wrappers, egg roll wrappers work beautifully, though they will yield a slightly thicker, bubbled crust similar to cheesy garlic butter rollups. Or, for a completely different style, try my air fryer hot ham and cheese wraps.
- The Cheese: Swap the mozzarella string cheese for Pepper Jack or Cheddar sticks if you want a spicy kick or a sharper flavor profile.
- The Meat: Thinly sliced turkey or roast beef can easily replace the deli ham.
- The Egg Wash: If you have an egg allergy, use a simple cornstarch slurry (1 teaspoon cornstarch mixed with 2 tablespoons water) to seal the wrappers.
Go grab some wrappers and try this tonight. It is a total game-changer for movie nights.
