I once ruined an entire Sunday roast by treating carrots like an afterthought. They steamed into sad, limp orange fingers.
It happened in my drafty first apartment on a rainy Tuesday. I ended up scraping charred, bitter honey off a warped baking sheet with a metal spatula until my wrist throbbed.
The issue is that carrots are packed with water, meaning they easily boil in their own juices instead of roasting. Most recipes tell you to toss them in honey from the start, which is a mistake. Honey burns at 320°F due to its high fructose content, long before the carrot's core softens. Flimsy, thin baking sheets make this worse by creating hot spots that scorch the glaze.

Ingredients
- 1 lb (450g) whole carrots, peeled and cut diagonally into 2-inch pieces
- 2 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Directions
- Preheat your oven to 400°F (200°C). Line a heavy-duty rimmed baking sheet with parchment paper.
- Toss the cut carrots with the melted butter, olive oil, salt, and pepper directly on the baking sheet. Spread them in a single layer, ensuring they do not crowd each other.
- Roast for 20 minutes, flipping halfway through, until the carrots are tender and starting to brown on the edges.
- While they roast, whisk the honey and minced garlic together in a small bowl.
- Drizzle the honey-garlic mixture over the carrots and toss well to coat. Return to the oven for an additional 8 to 10 minutes, keeping a close eye on them so the honey caramelizes but does not burn.
- Garnish with fresh chopped parsley and serve warm.
Notes
- I highly recommend using Diamond Crystal kosher salt. If you only have fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
- We use a mix of butter and olive oil because oil-soluble flavor compounds in the garlic bloom better in fat, while the oil raises the overall smoke point of the butter, preventing the milk solids from burning.
- Do not add the honey and garlic at the beginning. Garlic contains highly sensitive sugars that turn acrid and bitter if exposed to 400°F heat for more than 10 minutes.
- After a day in the fridge, the butter in the glaze will solidify into a dull, white coating. Don't panic; it will melt back into a glossy, gorgeous glaze once reheated.

Leftovers can be stored in an airtight container in the refrigerator for up to four days. As mentioned, the butter will solidify, but this is completely normal and easily fixed.
Avoid using the microwave if you can help it. It turns the carrots rubbery and makes the garlic flavor taste strangely muted.
Instead, reheat them in a dry skillet over medium-low heat, tossing frequently until the butter melts and the carrots are warmed through. This restores that glossy, freshly-roasted sheen perfectly.
