Ingredients

  • 24 wonton wrappers
  • 1 large egg beaten with 1 tbsp water (for egg wash seal)
  • Neutral oil for frying (like peanut or canola oil)

Directions

  1. In a medium bowl, combine the softened cream cheese, chopped crab meat, green onions, grated garlic, Worcestershire sauce, and Diamond Crystal kosher salt. Mix until completely smooth.
  2. Lay out 6 wonton wrappers at a time on a clean cutting board. Keep the remaining wrappers covered with a damp paper towel to prevent them from drying out.
  3. Place 1 rounded teaspoon of the cream cheese filling directly in the center of each wrapper. Do not overfill, or they will burst during frying.
  4. Brush the edges of each wonton wrapper lightly with the egg wash.
  5. Bring all four corners of the wrapper together at the top, pressing the edges firmly together to seal. Squeeze out any trapped air pockets as you seal the seams.
  6. Heat 2 inches of neutral oil in a heavy-bottomed pot or Dutch oven to 375°F (190°C).
  7. Fry the bombs in batches of 5 or 6 for about 2 to 3 minutes, turning occasionally, until they are deeply golden brown and blistered.
  8. Use a slotted spoon or spider to fish them out, then drain on a wire rack set over a baking sheet.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using Morton's kosher salt or standard table salt, cut the measurement in half (use 1/4 tsp) to avoid an overly salty filling.
  • The Cream Cheese Science: Always use block, full-fat cream cheese. Low-fat or whipped cream cheese contains a higher water-to-fat ratio, which creates excess steam during frying and guarantees a blowout.
  • Workflow Warning: Keep your unused wonton wrappers under a damp paper towel while assembling. If the edges dry out before you apply the egg wash, they will not fuse properly, and the filling will leak into your frying oil.
  • Storage Behavior: Once fried, the moisture inside the filling will slowly migrate outward, softening the crispy shell. For the absolute best texture, serve these within 20 minutes of frying.
