Ingredients

  • 1 package (17.25 oz) puff pastry sheets, thawed
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 4 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 1/4 cup grated parmesan cheese
  • 1 large egg, beaten (for egg wash)
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 tsp garlic powder

Directions

  1. Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, combine the squeezed dry spinach, crumbled feta, softened cream cheese, grated parmesan, garlic powder, kosher salt, and black pepper until completely uniform.
  3. Unroll the thawed puff pastry sheets onto a lightly floured surface and cut each sheet into 6 equal squares to make 12 squares total.
  4. Place a generous tablespoon of the spinach mixture into the center of each pastry square.
  5. Fold the corners of each square inward to meet in the center, pinching them tightly together to form a secure parcel.
  6. Transfer the puffs to the prepared baking sheets, brush the tops lightly with the beaten egg wash, and bake for 18 to 20 minutes until puffed and deeply golden brown.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have standard table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted filling.
  • Softened cream cheese acts as an emulsifier in the filling, binding the loose spinach and melting cheeses into a cohesive structure that won't leak out during baking.
  • Keep a close eye on your oven during the last 3 minutes of baking; puff pastry goes from beautifully golden to burnt remarkably fast due to the rapid browning of butter solids.
  • After a day in the fridge, the pastry will lose its signature crunch as it absorbs moisture from the spinach, but a quick trip to a 350°F oven or air fryer will revive that flaky texture beautifully.
