- 24 oz Philadelphia brand cream cheese, softened to room temperature
- 1 cup powdered sugar
- 1 tbsp lemon zest
- 3 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, cold
Directions
- In a medium bowl, mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
- In a small saucepan, combine raspberries, sugar, and lemon juice. Simmer over medium heat for 8-10 minutes until thickened. Strain through a fine-mesh sieve to remove seeds, then let cool completely.
- In a large bowl, beat the softened cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract until completely smooth and creamy.
- In a separate chilled bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the filling over the prepared crust and smooth the top with an offset spatula.
- Drop spoonfuls of the cooled raspberry reduction onto the cheesecake. Use a toothpick or skewer to gently swirl the raspberry into the lemon filling.
- Cover and refrigerate for at least 6 hours, or preferably overnight, until firm.

- Always use Philadelphia brand brick cream cheese (not the tub variety); for this recipe, you need 680 grams (three 8-ounce packages) of full-fat cream cheese.
- Whipping the heavy cream to stiff peaks before folding introduces air bubbles that are trapped in a fat-globule network, providing the structure needed to set the cheesecake without gelatin.
- When reducing the raspberry puree, stir constantly with a heatproof spatula to prevent the natural sugars from scorching on the bottom of the pan, which will ruin the bright, fresh flavor.
