Directions

  1. Preheat your oven to 400°F (200°C). Slice the bell peppers in half from stem to base, remove the seeds and membranes, and place them cut-side up in a baking dish.
  2. Drizzle the pepper halves with a tiny bit of olive oil and bake for 15 minutes until they start to soften slightly. Remove from the oven and drain any liquid that pools inside.
  3. While the peppers bake, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced red onion and cook for 4 minutes until translucent.
