Mini No Bake Cinnamon Roll Cheesecakes
These mini no-bake cinnamon roll cheesecakes feature a buttery cinnamon graham cracker crust, a velvety cream cheese filling, and a rich brown sugar cinnamon swirl, all finished with a sweet glaze drizzle.
- No Gelatin Required: Whipped heavy cream provides natural structure and a velvety mouthfeel without any rubbery texture.
- Bloomed Cinnamon: Melting the cinnamon directly into warm butter releases oil-soluble flavor compounds for a deeper spice flavor.
- Perfect Portion Control: Individual muffin liners make serving incredibly easy and eliminate the mess of slicing a whole cake.
My first college apartment had a kitchen the size of a coat closet, and a temperamental oven that died mid-bake during a freezing November morning. I was determined to have cinnamon rolls, so I tried microwaving the raw dough. It turned into a gray, rubbery puck that could have doubled as a hockey stick stopper.
That disaster cured me of microwave baking forever. However, it left me with a permanent craving for that brown sugar swirl. For a cookie version, try my Cinnamon Roll Cheesecake Cookies.
Most no-bake cheesecakes are a structural joke.
When you skip the oven, you lose the egg-protein matrix that binds a traditional baked cheesecake. To compensate, many recipes dump in packets of gelatin, turning a delicate dessert into something resembling a bouncy bouncy-ball. I've tested this structural science across several recipes, including my No Bake Oreo Cheesecakes and No Bake Cheesecake Cups, to find the perfect balance.
The fix is actually pure physics. By whipping heavy cream to stiff peaks and folding it into room-temperature Philadelphia cream cheese, you create a stable, airy emulsion. The fat molecules trap tiny air bubbles, giving you a velvety texture that holds its shape beautifully without a single sheet of gelatin.
Let's talk about the crust.
Instead of standard graham crackers, I use cinnamon graham crackers smashed to fine crumbs with a rolling pin. Pressing them into the muffin tin liners with the flat bottom of a shot glass ensures they don't crumble when peeled.
For the cinnamon roll swirl, we are blooming ground cinnamon directly in melted butter. This releases the oil-soluble flavor compounds in the spice, making it taste infinitely warmer and deeper than just stirring raw cinnamon into sugar. It's a technique I also rely on for my larger Cinnamon Roll Honeybun Cheesecake to keep the cinnamon flavor from tasting dusty.

Ingredients
- 1.5 cups cinnamon graham cracker crumbs (about 10-12 full sheets)
- 5 tbsp unsalted butter, melted (for the crust)
- 1 tbsp light brown sugar (for the crust)
- 4 tbsp unsalted butter, melted (for the cinnamon swirl)
- 1/3 cup packed light brown sugar (for the cinnamon swirl)
- 1 tbsp ground cinnamon
- 16 oz cream cheese, room temperature (2 bricks of Philadelphia brand)
- 1/2 cup powdered sugar (for the filling)
- 1 tsp vanilla extract
- 1/2 tsp Diamond Crystal kosher salt
- 1 cup heavy whipping cream, cold
- 1/2 cup powdered sugar (for the glaze)
- 1 tbsp milk
- 1/4 tsp vanilla extract (for the glaze)
Directions
- Line a 12-count muffin tin with paper liners. In a medium bowl, mix the cinnamon graham cracker crumbs, 5 tablespoons of melted butter, and 1 tablespoon of brown sugar until it looks like wet sand. Divide evenly among the liners and press down firmly using the flat bottom of a small glass. Chill in the freezer while preparing the filling.
- In a small bowl, whisk together the 4 tablespoons of melted butter, 1/3 cup of light brown sugar, and ground cinnamon for the swirl until smooth. Set aside.
- In a large bowl or stand mixer fitted with the whisk attachment, beat the cold heavy whipping cream until stiff peaks form. Transfer to a separate bowl and set aside.
- Swap to the paddle attachment. Beat the room-temperature cream cheese, 1/2 cup of powdered sugar, vanilla extract, and Diamond Crystal kosher salt until completely smooth and lump-free, scraping down the sides of the bowl as needed.
- Gently fold the whipped cream into the cream cheese mixture in two batches using a rubber spatula until just combined.
- Spoon half of the cheesecake filling over the chilled crusts. Drizzle half of the cinnamon swirl mixture over the filling. Top with the remaining cheesecake filling, then drizzle the rest of the cinnamon swirl on top. Use a toothpick to gently swirl the cinnamon mixture into the cheesecake.
- Refrigerate for at least 4 hours (or overnight) until firm. Before serving, whisk the glaze ingredients (powdered sugar, milk, and vanilla) together and drizzle over the mini cheesecakes.
Notes
- Cream Cheese Brand: Use brick-style Philadelphia cream cheese. Do not use tub cream cheese, which has a higher water content and will prevent the cheesecakes from setting. If using Diamond Crystal kosher salt, use 1/2 teaspoon; if using Morton's or fine table salt, reduce to 1/4 teaspoon.
- Temperature Science: Whipping cream must be cold (ideally below 40°F/4°C) because cold fat globule membranes are fragile enough to break and join together, trapping the air needed to create a stable foam matrix.
- Workflow Warning: When melting the butter for the cinnamon swirl, do not let it brown or overheat. Hot butter will cause the brown sugar to seize into a gritty, hard caramel clump instead of a smooth, pourable ribbon.
- Storage Behavior: After 24 hours in the fridge, the graham cracker crust will naturally soften slightly as it absorbs moisture from the filling, transforming from a crunchy base into a texture reminiscent of a soft, baked cookie crust.
- Clean Removal: To get clean edges when removing the paper liners, pop the cheesecakes into the freezer for 15 to 20 minutes before peeling the paper off.
Serving Suggestions
These mini cheesecakes are perfect for parties or cozy nights in. Here are a few ways to plate them and enhance the experience:
- Top with a dollop of extra whipped cream and a light dusting of freshly grated nutmeg.
- Serve alongside a hot, creamy beverage like a homemade Cherry Vanilla Latte to balance the warm cinnamon spices.
- Drizzle with warm caramel sauce just before serving for an extra layer of decadence.
- Top with toasted pecan pieces to add a satisfying crunch that mimics a pecan cinnamon roll.
- Serve on a wooden platter with fresh apple slices on the side for dipping into any leftover cinnamon swirl.
Storage and Reheating
These mini cheesecakes live their best life in the refrigerator. Keep them in an airtight container to prevent them from absorbing any stray fridge odors.
They will easily keep for up to 5 days, though the crust will lose its initial crunch by day three. Honestly, I think they taste even better on day two once the cinnamon swirl has had time to fully infuse into the cream cheese base.
You can also freeze them.
Wrap the individual cheesecakes tightly in plastic wrap and store them in a freezer-safe bag for up to 3 months. When the craving strikes, just let them thaw in the fridge for an hour before eating.
Ingredient Substitutes
If you need to swap things out, here are the most reliable substitutions I've tested:
- Cinnamon Graham Crackers: Use regular graham crackers or Biscoff cookies (which add a lovely spiced caramelized flavor).
- Heavy Whipping Cream: If you must make this dairy-free, use a high-quality coconut cream whipped to stiff peaks, but ensure it is chilled overnight first.
- Brown Sugar: Coconut sugar can be used in the cinnamon swirl, though it will have a slightly more rustic, less caramel-like flavor.
- Glaze: Swap the milk in the glaze for heavy cream or even a splash of maple syrup for a maple-cinnamon twist.
I hope these little cheesecakes bring a bit of cozy, low-effort joy to your kitchen. They are proof that you don't need a perfectly functioning oven—or a giant kitchen—to make something that feels like a triumph. Let me know how yours turn out!
