Ingredients

  • 1.5 cups all-purpose flour
  • 0.25 cup cornstarch
  • 1 tsp baking powder
  • Peanut oil (for frying)
  • 3 tbsp cayenne pepper
  • 1 tbsp light brown sugar
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 brioche buns, toasted
  • Dill pickle chips
  • Mayonnaise

Directions

  1. Pound the chicken thighs to an even 1/2-inch thickness using a meat mallet. Season them generously with Diamond Crystal kosher salt and let them rest in the fridge for at least 30 minutes.
  2. In a shallow bowl, whisk together the buttermilk, egg, and hot sauce. In a second shallow bowl, combine the all-purpose flour, cornstarch, baking powder, and a pinch of salt.
  3. Dredge each chicken thigh in the flour mixture, then dip it completely into the buttermilk mixture, and dredge once more in the flour, pressing firmly to adhere the coating.
  4. Heat peanut oil in a heavy Dutch oven to 350°F (175°C). Fry the chicken in batches for 5 to 6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. While the chicken is frying, whisk the cayenne pepper, brown sugar, garlic powder, and smoked paprika in a heatproof bowl. Carefully ladle 1/2 cup of the hot frying oil into the spices and whisk until smooth.
  6. Immediately brush the hot glaze over the fried chicken thighs on both sides. Assemble the burgers on toasted brioche buns with mayonnaise and plenty of dill pickle chips.
