Notes
- I highly recommend using Philadelphia cream cheese; if substituting with a low-fat version, note that 1 ounce equals about 28 grams.
- Whey protein isolate absorbs liquid much faster than whey-casein blends. If your dough is too dry, the protein matrix hasn't hydrated fully—let it sit for 5 minutes before adding more liquid.
