No Bake Crispy Peanut Butter Balls
These no-bake crispy peanut butter balls are the ultimate quick treat, combining creamy peanut butter, crispy rice cereal, and a glossy chocolate shell.
- Crispy rice cereal provides structural integrity and a light, airy crunch that cuts through the dense richness of the peanut butter.
- Powdered sugar absorbs excess moisture and stabilizes the oil-soluble flavor compounds in the peanut butter without making the mixture gritty.
- A touch of coconut oil in the chocolate coating lowers its melting point, ensuring a glossy, snappy shell that doesn't crack when you bite into it.
I still remember the sticky, humid July afternoon in my mother's kitchen when I tried to make chocolate-dipped treats for the first time, only to have the chocolate seize into a dull, chalky lump because a single drop of water fell from my damp fingertips into the bowl.
I wept over ruined fudge.
Most no-bake peanut butter balls turn into a cloying, greasy paste that sticks to the roof of your mouth because the ratio of fat to dry sugar is completely out of whack. When you use cheap, oily peanut butter, the emulsion breaks down the second it hits room temperature, leaving you with a sweaty, sliding mess that refuses to hold its shape.
We fix this by stabilizing the peanut butter's protein matrix with powdered sugar and crispy rice cereal.
It gives you that perfect, snappy contrast against the rich center. If you loved our Chocolate Caramel Pretzel Bars, this simplified, bite-sized version will absolutely blow you away.
Trust me on this one.

Ingredients
- 1 cup (250g) creamy peanut butter (do not use natural/runny)
- 3 tablespoons unsalted butter, softened
- 1 ½ cups (180g) powdered sugar
- 1 ½ cups (45g) crispy rice cereal
- ½ teaspoon Diamond Crystal kosher salt
- 1 ½ cups (250g) semi-sweet chocolate chips
- 1 tablespoon refined coconut oil
Directions
- Line a large baking sheet with parchment paper and set aside.
- In a large bowl, beat the peanut butter and softened butter together until completely smooth and combined.
- Gradually stir in the powdered sugar and kosher salt until a thick, cohesive dough forms.
- Gently fold in the crispy rice cereal using a rubber spatula, being careful not to crush the cereal pieces.
- Roll the mixture into 1-inch balls (about 1 tablespoon each) and place them on the prepared baking sheet. Freeze for 15 minutes to firm up.
- While the balls are freezing, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring in between, until completely melted and smooth.
- Using a fork or dipping tool, dip each chilled peanut butter ball into the melted chocolate, tapping off the excess against the side of the bowl. Place back on the parchment paper.
- Refrigerate for 10 minutes until the chocolate shell is completely set. </
Notes
- Use Ghirardelli semi-sweet chocolate chips for the best melting profile, and always measure with Diamond Crystal kosher salt (use ½ teaspoon; if using fine table salt, cut it down to ¼ teaspoon).
- Avoid natural, oil-separating peanut butters. The lack of emulsifiers in natural peanut butter prevents the protein matrix from binding correctly with the powdered sugar, resulting in a greasy, crumbly texture.
- When melting the chocolate, ensure your bowl and spatula are bone-dry. A single drop of water will cause the chocolate to seize into an unworkable, chalky paste.
- These treats will soften significantly if left at room temperature for more than an hour. Keep them stored in the fridge to maintain that perfect, snappy chocolate shell.
Serving Suggestions
These little bites are incredibly versatile and make the perfect addition to any dessert spread or holiday platter.
- Arrange them on a wooden serving board alongside fresh berries to balance the rich, nutty sweetness.
- Serve them chilled in small paper liners for an elegant, mess-free party finger food.
- Pair them with a hot cup of coffee or a creamy Cherry Vanilla Latte for an afternoon pick-me-up.
- Crush a few over a bowl of vanilla bean ice cream for an instant gourmet sundae topping.
- Include them in a holiday cookie exchange alongside our festive Patriotic Oreo Balls.
Storage and Reheating
Storing these beauties is incredibly straightforward, but you must respect the physics of chocolate. Because we added a touch of coconut oil to the glaze for that gorgeous, glossy snap, the shell will soften if left in a warm room.
Keep them chilled.
Place the set balls in an airtight container, separating the layers with sheets of parchment paper so they do not stick together. They will happily live in your refrigerator for up to two weeks.
If you want to keep a stash for long-term emergencies, they freeze beautifully for up to three months. Just thaw them in the fridge for twenty minutes before you plan to sink your teeth into one.
Do not microwave them.
Ingredient Substitutes
If you need to adapt this recipe for dietary restrictions or pantry limitations, here are the swaps that actually work without ruining the texture.
- Peanut Butter Alternative: Swap the peanut butter for sunflower seed butter (like SunButter) for a completely nut-free option that still binds beautifully.
- Chocolate Swap: Use dark chocolate chips or dairy-free chocolate chunks if you prefer a less sweet, vegan-friendly outer shell.
- Cereal Substitute: If you don't have crispy rice cereal, crushed pretzels make an incredible salty-sweet alternative. Check out our Layered chocolate peanut butter bars with pretzel topping for inspiration.
- Coconut Oil Swap: You can use vegetable shortening in place of the coconut oil to help thin out the chocolate, though coconut oil provides the best gloss.
There is something deeply comforting about a dessert that requires zero oven time but delivers maximum satisfaction. Roll up a batch, keep them tucked away in the back of your fridge, and try not to eat them all in one sitting.
