No-Bake Lemon Cheesecake
This creamy, ultra-refreshing no-bake lemon cheesecake features a crisp graham cracker crust and a velvety, citrus-packed filling that sets beautifully without gelatin.
- Full-fat brick cream cheese provides the necessary fat structure to set firmly without the need for gelatin.
- Freshly squeezed lemon juice reacts with the dairy proteins to naturally thicken the filling as it chills.
- A touch of sour cream adds a complex, tangy depth that perfectly mimics a traditional baked cheesecake.
Years ago, I tried to impress my in-laws with a summer dessert, only to serve them what looked like lemon-scented soup in a soggy graham cracker crust. It was humiliating. I watched them politely eat the puddle with spoons while trying to pretend it was a gourmet custard.
I spent the next morning scrubbing sticky, curdled cream cheese from the springform pan until my knuckles turned raw.
Most no-bake recipes rely on gelatin to set, which turns the texture rubbery, or they skimp on the lemon juice because the acid breaks down the dairy emulsion. Bear with me here: when you dump highly acidic liquid into cream cheese, the proteins clump together and weep water. This brand of cream cheese—specifically the organic tub varieties—failed every single test because their high water content guarantees a soupy disaster.
The secret is simple: fat and air.
By whipping heavy cream to stiff peaks and folding it into whipped, full-fat brick cream cheese, we create a stable protein matrix that traps the lemon juice. Trust me on this one, you do not need gelatin to get a clean, sliceable wedge that is, hands down, better than any baked version or even my favorite Strawberry Cheesecake Bars.

Ingredients
- 1.5 cups (150g) graham cracker crumbs
- 1/3 cup (65g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- Pinch of Diamond Crystal kosher salt
- 16 oz (450g) full-fat brick cream cheese, softened
- 1.25 cups (150g) powdered sugar
- 1 cup (240ml) heavy whipping cream, cold
- 1/4 cup (60g) sour cream, cold
- 1/3 cup (80ml) fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
Directions
- In a medium bowl, mix the graham cracker crumbs, sugar, melted butter, and salt. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan using the flat bottom of a measuring cup, then freeze for 10 minutes.
- In a large bowl, beat the softened cream cheese and powdered sugar together with a hand mixer until completely smooth and creamy, about 2 minutes.
- Add the sour cream, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture, beating on medium speed until fully incorporated.
- In a separate chilled bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the lemon cream cheese mixture in two additions using a rubber spatula until no white streaks remain.
- Pour the filling into the prepared crust and smooth the top with an offset spatula, then cover and refrigerate for at least 6 hours (or overnight) until firm.
Notes
- Always use brick-style cream cheese, preferably Philadelphia brand (two 8-ounce/226g packages). Do not use tub cream cheese, as its higher water content will prevent the filling from setting properly.
- The citric acid in the fresh lemon juice acts as a natural coagulant, reacting with the proteins in the cream cheese to help the mixture firm up as it chills.
- Ensure your heavy whipping cream is ice-cold before whipping; if it is too warm, the fat globules won't trap air properly, leaving you with a flat, runny filling.
- After 24 hours in the fridge, the graham cracker crust will naturally soften slightly as it absorbs moisture from the filling, making it much easier to slice cleanly.
Serving Suggestions
This bright, zesty dessert is best enjoyed chilled on a warm afternoon. Here are a few ways to plate and enhance the experience:
- Drizzle with a spoonful of warm blueberry compote just before serving.
- Pair with a glass of refreshing Grated Lemon Lemonade for the ultimate citrus celebration.
- Serve alongside fresh summer berries like raspberries or blackberries to balance the tartness.
- Garnish with fresh mint leaves for a pop of color and a cool, aromatic contrast.
- If you enjoy this flavor profile, try serving it alongside my classic Key Lime Pie at your next backyard gathering.
Storage and Reheating
Keep this cheesecake strictly in the refrigerator until the moment you plan to slice it. Because it contains no gelatin, it relies entirely on the cold temperature to maintain its structural integrity.
Leftovers can be stored in the springform pan covered tightly with plastic wrap for up to 5 days.
Do not freeze it.
Freezing will break the delicate emulsion of the whipped cream and cream cheese. When it thaws, the filling will weep water and lose its velvety, cloud-like texture.
Ingredient Substitutes
If you need to swap out a few ingredients, here are the best tested alternatives:
- Graham Crackers: Swap with digestive biscuits or vanilla wafers. If you want a richer crust, try using crushed shortbread cookies.
- Sour Cream: You can use full-fat Greek yogurt instead. It provides the same tangy acidity and thick texture.
- Lemon Juice: If you are short on lemons, lime juice works beautifully. It will give you a flavor profile similar to my Key Lime Pie Bars.
- Powdered Sugar: Do not substitute with granulated sugar in the filling, as it will make the texture gritty.
Go ahead and clear some fridge space tonight. Once you slice into that first clean, velvety wedge, you'll completely forget about the oven.
