Ingredients
- 2 cups (480ml) heavy whipping cream, cold
- 8 oz (226g) cream cheese, softened to room temperature
- 1 cup (120g) powdered sugar
- 1 tsp vanilla bean paste (or pure vanilla extract)
- 1/4 tsp Diamond Crystal kosher salt
- 14.4 oz (400g) graham crackers (about 3 sleeves)
- 2 cups fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Directions
- In a large bowl, beat the softened cream cheese, powdered sugar, vanilla bean paste, and kosher salt with a hand mixer until completely smooth and creamy.
- Slowly pour in the cold heavy whipping cream while beating on low speed, then increase to medium-high and whip until stiff peaks form.
- Spread a thin layer of the whipped cream mixture onto the bottom of a 9x13-inch baking dish to keep the crackers from sliding.
- Arrange a single layer of graham crackers over the cream, breaking them as needed to fit the dish.
- Spread one-third of the remaining cream mixture over the crackers, then scatter one-third of the sliced strawberries, blueberries, and raspberries on top.
- Repeat the layers (crackers, cream, berries) two more times, ending with a beautiful arrangement of fresh berries on the top cream layer.
- Cover tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften into a cake-like texture before slicing.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's kosher salt, reduce the amount by half (to 1/8 teaspoon) to avoid an overly salty cream.
- Do not use low-fat or whipped cream cheese. The high fat content and emulsifiers in brick-style, full-fat cream cheese are essential to bind the water molecules in the heavy cream, preventing the mixture from collapsing into a watery puddle.
- Make sure your cream cheese is truly at room temperature before beating, but your heavy cream is ice-cold. If the cream cheese is cold, you will end up with tiny, stubborn lumps of cheese that no amount of whipping can smooth out.
- After 24 hours in the fridge, the graham crackers will fully hydrate and achieve a perfect, tender cake texture. By day three, the berries will begin to release their juices, making the cake slightly softer but still incredibly delicious.
