  • 1/3 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp Diamond Crystal kosher salt (for dressing)
  • 1/4 tsp freshly cracked black pepper

Directions

  1. Bring a large pot of water to a rolling boil. Add 1 tablespoon of Diamond Crystal kosher salt, then drop in the rotini pasta. Cook according to package instructions until just al dente.
  2. Drain the pasta in a colander and immediately rinse with cold running water until completely cooled to the touch. Shake well to remove excess water.
  3. In a small bowl or mason jar, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, dried oregano, garlic powder, salt, and black pepper. Whisk vigorously or shake until fully emulsified.
  4. In a large mixing bowl, combine the cooled rotini, diced cucumber, red bell pepper, yellow bell pepper, cherry tomatoes, red onion, and Kalamata olives.
  5. Pour the dressing over the pasta and vegetables. Toss thoroughly with tongs until everything is evenly coated.
