Ranch Garlic Parmesan Chicken Skewers
These Ranch Garlic Parmesan Chicken Skewers are incredibly juicy, packed with savory garlic butter, and finished with a golden Parmesan crust.
- Mayo-Based Emulsion: Unlike oil-based marinades that drip off and cause grill flare-ups, mayonnaise clings to the chicken, creating a protective barrier that locks in moisture.
- Double Garlic Punch: We use garlic powder in the marinade for deep, sweet flavor, then brush with fresh garlic butter right at the end for a sharp, aromatic finish.
- Lactic Acid Tenderization: The buttermilk solids in the ranch seasoning gently break down the chicken's protein fibers, ensuring every bite is melt-in-your-mouth tender.
The first time I tried making chicken skewers for my family's annual July cookout, I ended up serving what could only be described as seasoned charcoal.
I actually cried over those dry, rubbery cubes while my uncle politely chewed a single piece for a solid three minutes.
It was humiliating.
The issue is that chicken breast has almost zero fat, meaning it overcooks in a literal heartbeat on a hot grill grate.
Without a proper barrier, the heat aggressively strips the protein matrix of its moisture, leaving you with sawdust.
Think about this in terms of physics: a dry heat source meets a lean protein, and the water inside evaporates instantly. My saving grace was creating a thick, emulsified marinade using Duke's mayonnaise, as generic brands failed our tests because they contain too much water and split on the grill.
It works like magic.
You get incredibly juicy chicken every single time, even if you lose track of time.
To finish, we shower the hot skewers with freshly grated parmesan and garlic butter. The residual heat melts the cheese instantly, creating a golden, savory crust that is hands down the best thing you will eat this summer.
If you want to expand your cookout menu, these pair beautifully with our Grilled Vegetable Kabobs.
For those rainy days when you want to skip the outdoor grill entirely, you can easily make our Air Fryer Chicken Skewers inside your kitchen.
It is incredibly convenient.

Ingredients
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup mayonnaise (Duke's or Hellmann's preferred)
- 2 tablespoons dry ranch seasoning mix
- 1 teaspoon garlic powder
- 1/2 teaspoon Diamond Crystal kosher salt
- 1/4 teaspoon freshly cracked black pepper
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, finely minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh Italian parsley, finely chopped
Directions
- In a medium bowl, whisk together the mayonnaise, dry ranch seasoning, garlic powder, kosher salt, and black pepper until smooth.
- Add the cubed chicken to the bowl and toss until every single piece is completely coated in the mayonnaise mixture. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
- Preheat your grill or grill pan to medium-high heat (about 400°F/204°C) and lightly oil the grates.
- Thread the marinated chicken cubes onto the skewers, leaving a tiny bit of space between each piece so they cook evenly.
- Grill the skewers for 5 to 6 minutes per side, turning once, until the chicken is beautifully charred and reaches an internal temperature of 165°F (74°C).
- While the chicken is grilling, stir the minced fresh garlic into the melted butter.
- Remove the skewers from the grill, immediately brush them generously with the garlic butter, and shower them with the grated Parmesan cheese and chopped parsley so the cheese melts from the residual heat.
Notes
- Salt Conversion: We use Diamond Crystal Kosher Salt. If you are using fine table salt or Morton's kosher salt, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
- The Mayo Science: Do not skip the mayonnaise! It is an emulsion of oil and egg yolk that acts as a physical barrier, preventing the chicken's protein matrix from drying out under high heat. It will not taste like warm mayo, promise.
- Burn Warning: Watch the fresh garlic butter closely. Do not brush the garlic butter onto the chicken while it is still on the grill, as the fresh minced garlic will burn instantly and turn bitter. Brush it on immediately after removing the skewers from the heat.
- Storage Behavior: Leftovers store well, but note that the Parmesan cheese coating will lose its delicate, melty texture and tighten up once chilled. Reheat gently to soften it back up.
Serving Suggestions
These skewers are the ultimate crowd-pleaser and pair beautifully with classic summer sides. Serve them hot off the grates alongside refreshing salads and grilled breads to complete your backyard feast.
- A crisp, cold cucumber salad to cut through the rich garlic butter.
- Grilled corn on the cob brushed with lime and cotija cheese.
- Warm pita bread or grilled flatbread for wrapping the chicken bites.
- A side of extra ranch dressing or garlic aioli for dipping.
- A vibrant pasta salad tossed with cherry tomatoes and fresh herbs.
Storage and Reheating
Store any leftover chicken skewers in an airtight container in the refrigerator for up to three days. I highly recommend sliding the chicken off the metal or wooden skewers before storing, as this keeps the meat compact and prevents it from drying out in the cold air.
Avoid the microwave at all costs unless you enjoy rubbery chicken.
Instead, reheat the chicken pieces in a skillet over medium-low heat with a splash of water or chicken broth to restore moisture. Cover the pan with a lid for two minutes to let the steam gently warm the meat through without drying it out.
It works beautifully.
You can also toss the cold leftovers directly into a fresh green salad for an easy lunch.
Ingredient Substitutes
If you need to swap things out based on what is in your pantry, here are the easiest conversions.
- Chicken Breasts: Swap in boneless, skinless chicken thighs for an even juicier result. They have more fat and are much more forgiving on the grill.
- Mayonnaise: You can use full-fat Greek yogurt instead, though it won't create quite the same rich, non-stick barrier as mayonnaise.
- Parmesan: Pecorino Romano or Asiago cheese make fantastic, salty substitutes that melt beautifully over the hot chicken.
- Ranch Seasoning: If you don't have a packet, blend onion powder, garlic powder, dried dill, dried chives, and a pinch of buttermilk powder.
There is something incredibly satisfying about watching a tray of these disappear in seconds at a cookout. Trust me on this one, make a double batch because everyone will be asking for seconds before the first round even cools down.
