  • 60 ml thick salted caramel sauce
  • 75 g pretzels, coarsely crushed

Directions

  1. In a medium bowl, beat the softened cream cheese and powdered sugar together until completely smooth and free of lumps.
  2. Fold in the vanilla extract, Diamond Crystal kosher salt, and graham cracker crumbs until a thick, uniform dough forms.
  3. Scoop tablespoon-sized portions of the mixture, flatten slightly in your palm, place a small dollop of salted caramel in the center, and carefully roll them between your palms into tight spheres.
  4. Roll each ball in the coarsely crushed pretzels, pressing gently so the pieces cling to the surface.
  5. Place the balls on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to set before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt, cut the volume by half to avoid an overly salty bite.
  • Cream cheese must be full-fat brick style because the higher protein-to-moisture ratio ensures the balls maintain their structural emulsion at room temperature, whereas spreadable tub cream cheese failed every single test because of its high water content.
  • Do not crush your pretzels into a fine dust; you want distinct, coarse pieces to maintain the physical barrier that prevents the caramel from leaking out.
  • After a day in the fridge, the pretzels will naturally lose some of their crunch as they absorb moisture from the cream cheese, so roll them in pretzels just before serving if making ahead.
