Ingredients
- 1 cup (100g) graham cracker crumbs
- 3 tbsp (42g) unsalted butter, melted
- 1 tbsp granulated sugar
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (45g) unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp Diamond Crystal kosher salt
- 1 large egg, room temperature
- 1/2 cup (120ml) whole milk
- 1/4 cup (60ml) vegetable oil
- 1/2 cup (120ml) hot water
- 1 jar (7 oz / 198g) marshmallow fluff
- 3 large egg whites
- 3/4 cup (150g) granulated sugar
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
Directions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a small bowl, mix the graham cracker crumbs, melted butter, and 1 tablespoon of sugar until it resembles wet sand. Press 1 tablespoon of the mixture firmly into the bottom of each cupcake liner. Bake for 5 minutes, then remove and let cool.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the egg, milk, and vegetable oil, whisking until smooth. Gently stir in the hot water (the batter will be very thin).
- Divide the batter evenly among the 12 liners, filling them about two-thirds full over the baked crust. Bake for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
- Using a cupcake corer or a small knife, cut a hole in the center of each cooled cupcake, going about halfway down. Spoon or pipe the marshmallow fluff into each cavity until level with the top of the cake.
- To make the meringue frosting, combine egg whites, sugar, and cream of tartar in a heatproof bowl set over a pot of simmering water (double boiler). Whisk constantly for 3 to 4 minutes until the sugar is completely dissolved and the mixture is warm to the touch.
- Remove the bowl from the heat and add the vanilla extract. Using a hand mixer or stand mixer fitted with the whisk attachment, beat on high speed for 5 to 7 minutes until stiff, glossy peaks form.
- Pipe or spoon the meringue frosting generously onto the cupcakes. Use a kitchen torch to gently brown the meringue until toasted and golden. Serve immediately.
Notes
- Salt Conversion: I highly recommend using Diamond Crystal kosher salt. If you only have fine table salt, use exactly half the amount (1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting the delicate chocolate batter.
- The Hot Liquid Science: Adding hot water at the end of the batter mixing process is crucial. The heat gelatinizes the starches in the flour and blooms the cocoa powder, releasing oil-soluble flavor compounds for a much deeper chocolate flavor.
