Soft Pistachio Gooey Butter Cake Dusted With Powdered Sugar on a Serving Plate
This soft pistachio gooey butter cake features a rich, nutty cake base topped with a decadently sweet, gooey cream cheese layer and a dusting of powdered sugar.
- Cream cheese acts as an emulsifier, preventing the pistachio fats from separating during baking.
- Finely ground raw pistachios add authentic flavor and structure without the artificial notes of pudding mix.
- Baking at a slightly lower temperature ensures the edges set beautifully while the center remains perfectly molten.
I still remember the afternoon I dropped an entire box of instant pistachio pudding mix onto my kitchen floor, watching a pale green cloud settle over my favorite boots. It was my third attempt at recreating the legendary St. Louis gooey butter cake with a nutty twist, and I was covered in green dust and despair.
My first two attempts had turned into dense, oily bricks that tasted more like almond extract than actual pistachio. If you love pistachio desserts, you might also want to try our Easy Pistachio Croissants for a much cleaner baking experience.
The problem lies in the physics of the gooey layer. Most traditional recipes rely on a box of yellow cake mix and a mountain of powdered sugar, which creates a protein matrix that is far too weak to support the heavy fats of pistachio paste. When you bake it, the emulsion breaks, leaving you with a greasy puddle instead of that signature crackly, molten top.
But I found the fix.
By whipping real cream cheese with a touch of almond extract and folding in finely ground raw pistachios, we stabilize the fats while keeping the center incredibly gooey. If you are a fan of rich cream cheese bakes, my Strawberry Cheesecake Bars are another crowd-pleaser that uses a similar stabilization technique.
You do not need any fancy equipment to pull this off, just a sturdy whisk and a bit of patience. Let's get baking.

Ingredients
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tsp baking powder
- 1/2 tsp Diamond Crystal kosher salt
- 6 tbsp (85g) unsalted butter, melted and cooled
- 1 large egg
- 8 oz (226g) cream cheese, softened
- 1/2 cup (100g) unsweetened pistachio paste
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 3 cups (360g) powdered sugar, plus extra for dusting
- 1/2 cup (60g) raw pistachios, finely chopped
Directions
- Preheat your oven to 325°F (163°C) and grease a 9x9-inch metal baking pan with butter, then line it with parchment paper.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and kosher salt.
- Pour in the melted butter and egg, then stir with a wooden spoon until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan using your fingers to form the crust.
- In a large bowl, beat the softened cream cheese and pistachio paste with a hand mixer on medium speed until completely smooth.
- Add the eggs, vanilla extract, and almond extract, beating until fully incorporated.
- Reduce the mixer speed to low and gradually add the powdered sugar one cup at a time, mixing until smooth.
- Pour the gooey pistachio mixture over the crust, spreading it evenly to the edges.
- Sprinkle the finely chopped raw pistachios over the top of the batter.
- Bake for 38 to 42 minutes, or until the edges are golden and set, but the center still jiggles slightly when you gently shake the pan.
- Cool completely in the pan on a wire rack before dusting generously with powdered sugar and slicing.
Notes
- I highly recommend using Philadelphia brand brick cream cheese (do not use the tub version, which has a higher water content). If you only have access to store brands, ensure it contains at least 33% milk fat.
- The almond extract is crucial here. It contains benzaldehyde, an organic compound that chemically mirrors the natural flavor compounds in pistachios, boosting the nuttiness without adding artificial green food coloring.
- Keep a close eye on your oven around the 35-minute mark. If you overbake this cake, the starch gelatinization process will complete entirely, turning your gooey center into a dry, spongy cream cheese block.
- As the cake sits in the fridge overnight, the moisture redistributes, making the gooey layer even denser and fudgier. It actually tastes better on day two.
Serving Suggestions
This rich, sweet cake is best enjoyed at room temperature or slightly warm. Here are a few ways to plate and pair it to balance the sweetness:
- A dollop of unsweetened whipped cream to cut through the rich cream cheese layer.
- A handful of fresh raspberries or blackberries for a tart, acidic contrast.
- A hot cup of espresso or dark roast coffee to complement the nutty pistachio notes.
- A scoop of vanilla bean ice cream (check out our strawberry vanilla bean ice cream for an incredible flavor pairing).
- A light dusting of high-quality matcha powder mixed with the powdered sugar for a vibrant green color and earthy undertone.
Storage and Reheating
Do not leave this cake on the counter.
Because of the high dairy content in the gooey cream cheese layer, you must store any leftovers in the refrigerator. Wrap the pan tightly in plastic wrap or transfer the slices to an airtight container to prevent them from absorbing fridge odors.
It will keep beautifully in the fridge for up to five days. In fact, the texture becomes wonderfully fudgy after a day of chilling.
If you want to freeze it, wrap individual slices tightly in plastic wrap, then wrap them again in aluminum foil. They will last in the freezer for up to three months, and you can thaw them overnight in the fridge before serving.
To reheat, simply pop a slice in the microwave for 10 to 15 seconds. This softens the butter and cream cheese, restoring that perfect, fresh-out-of-the-oven gooeyness.
Ingredient Substitutes
If you need to swap some ingredients based on what you have in your pantry, here are the best tested substitutes:
- Pistachio Paste: You can substitute this with unsweetened almond butter or cashew butter, though it will change the flavor profile.
- Diamond Crystal Kosher Salt: If using fine table salt, reduce the amount by half (use 1/4 teaspoon) to avoid an overly salty crust.
- All-Purpose Flour: For a gluten-free option, use a high-quality 1:1 gluten-free baking flour blend containing xanthan gum.
- Almond Extract: If you have a nut allergy, swap this for vanilla bean paste to maintain a rich, warm flavor profile.
I hope this gooey pistachio masterpiece brings as much joy to your kitchen as it does to mine. It is sweet, nutty, and absolutely perfect for sharing with the people you love. Let me know how yours turns out in the comments below!
